Dinner Recipe for you

I made TJ's chicken last week without the soup mix and added caramelized onions and zucchini. It was awesome.

Last night I made these mini meat pies that were super easy and thought I would share. I combined a few recipes. It's one of those that you can modify to use whatever you have on hand. It's at least MPI friendly and I'm fairly sure MSPI too.

1 onion, chopped or sliced
minced garlic
ground beef, venison, whatever
veggies (small diced carrots, zucchini, potatoes, frozen peas, whatever)
beef broth 
worcestershire sauce
2 premade pie crusts (i used pillsbury)

Saute the onions and garlic until soft, add ground meat and cook through. Add veggies, about a cup of beef broth, worcestershire sauce to taste, salt, pepper, and whatever seasonings you like. I used thyme, oregano, parsley. Cook until the veggies start to soften.

Lay out pie crusts and cut 8 circles about 4 inches around. Place each one in the cup of a muffin tin. Fill with the meat filling.
Cut 8 3in circles and lay on top of each filled cup. Cut 2 small slits in the top of each, and brush with melted butter, olive oil, earth balance, etc.

Bake at 350 for approx 20 min, until crust is nicely browned.

The extra filling can be frozen for next time, or you can use 4 crusts (2 boxes) and use it all.

It may sound complicated but this really took me about 20 min to prep.

    Hmm...My worcestershire does not appear to have soy, but I'm certainly not an expert on that. In any event, it would be totally fine to omit it. 


    You could use a GF pie crust if you have it on hand or feel like doing a little more work.

    "natural flavoring" = soy.

    But it really sounds like a good recipe!  I'll have to try it.  If I could find/make a good pie crust, I would totally make hand pies out of this filling!  I love empanadas but can't eat them anymore.

  • I can vouch for this recipe.  I've made something similar in the past as a way to use up leftover pot roast and the veggies I cooked with it.  It is super yummy.  You can also use homemade beef gravy instead of the worcestershire/beef broth for a creamier texture. 

    When G was MPI we successfully used Pillsbury crusts.

    Could you use rice wrappers?
    Perhaps... what happens if you fry rice paper wrappers?

  • I had found an amazing chart with what grocery store items are MSPI safe, and I was so excited the Pillsbury crust was on there. Unfortunately, my phone decided yesterday to no longer let me open the folder with all my bookmarked MSPI recipes. Otherwise, I could link the chart.

    My girl hasn't reacted to Worcestershire sauce but reacted to supposedly safe soybean oil (not soy protein) in the rare soda I had at Christmas. Go figure.

    2) P reacts to both Worcestershire, and to soy oil, which is a rare reaction.  She also reacts to soy lecithin, which most MSPI babies don't.
    3) Coca Cola products are dedicated soy oil free.  Coca cola for lyfe!  (I am also a rare soda drinker.)

    @Rugbymama However much you want.  As long as they fit neatly in your casserole dish.  Sunday I made them with 6 large tenders.  I've made it with 3 large breasts.  Really, whatever feeds your family correctly and fits in your dish will work.  When we make it for E, we cut all the chicken into bite size pieces and lay it in the casserole dish.  For company, we prefer to have larger chicken strips.  Just adjust your cooking time to make sure your chicken is cooked through and doesn't dry out.

    Soy lecithin is supposedly safe?! I had wondered because I ate a kind bar with SL and she seemed fine but I got too nervous to try again.

    Yup.  Soy lecithin was not a problem for us.  Nor was soybean oil.

    Pop tarts were part of my "fuck this thing in particular" breakdown at the grocery store this weekend.

    @rugbymama - I think that would work just fine! They will be a little flakier and maybe not as sturdy, but just as tasty. The only thing I would do differently is to refrigerate the pies for about 20 min after you put them together, and before you bake them. That is the technique I use when I make mini beef wellingtons with puff pasty. If I don't refrigerate them first, they always set off the smoke detectors. I'm not sure why but it works. Maple probably knows why.

  • I made TJs chicken this weekend, too. Yum! I substituted with homemade onion soup mix & chicken broth. Even my girls gobbled it up & they're picky dinner eaters.

    I'll have to try the meat pies. :-)
