Meal Plan

I figure we need more food posts and less crap so here's another food post.  

Beef Stroganoff over egg noodles. Baked corn pudding casserole.

Crock Pot pork tenderloin, mashed potatoes and a roasted veg.

Ravioli in a meatsauce with a side salad. 

Orange Chicken, rice and snap peas 

These are in the oven...

    That's as far as I've planned this week. I better come up with more ideas before I go to the grocery store!

    I love these posts, they always give me ideas and motivation.......now if only I would follow through and actually cook most of the meals I plan :/
    We'll probably have quesadillas one night, hamburgers another, and those meatball subs are sounding pretty delicious right now @picklesx so I might have to add them to the list.

    Edit: I really should proofread these before I hit submit...

  • Leftover turkey casserole thing tonight for dinner

    Honey mustard pork tenderloin with mash potatoes and veggies

    Meat and veggie lasagna or stuffed shells(have both and haven't decided which one i will use, made with the se ingredients).

    Beef and broccoli with rice and other veggies.

    Pan seared tuna steak with baked potatoes and peas.

    For lunches tuna salad or chicken salad stuffed pita pockets. (Tuna 2 days, chicken the rest). For my tuna/chicken salads I use laughing cow light cheese wedges1-2, peas, chopped celery, grapes, flaxseed, chopped almonds, craisins, apples and spinach. I might add tangerines in there this week.

  • I'm also going to make blueberry muffins. Double the batch and throw some in the freezer.

    Spaghetti and Meatballs
    Sausage and Peppers w/Potatoes
    Spanakopita Pie with Fruit Salad
    Trader Joe's Orange Chicken

    We'll be at my brother and sister in law's tomorrow night for the football game, so all I have to bring is a snack.
  • This weekend we stocked up on chicken and canned veggies, broth, tomatoes, and beans...those in NJ might know about Shoprite's Can-Can sale...anyway, lots of crockpot meals this week. Sun: turkey sausage, kale, white beans over pasta. Mon: crockpot chicken tacos. Tues: taco soup with leftovers from tacos. Wed: crockpot chicken and peppers in spicy tomato sauce over brown rice. Thursday: crockpot chicken and stuffing with broccoli on the side. Fri: leftovers or pizza.
    MIL goes to shop rite and gets SIL and I a ton of canned stuff. I'm glad she does since it is normally crazy, no parking, millions of people in line. Too much for me. 
  • I think I have my meals figured out for the week now:

    Monday- shrimp and avocado po'boys
    Tuesday- pesto chicken sandwiches
    Wednesday- taco bowls (lettuce, rice, beans, shredded chicken, avocado)
    Thursday- chicken and spinach quesadillas
    Friday- eggplant Parmesan
    Saturday- mushroom chicken and rice

    Not in NJ, but we have Shoprite here. I hit up the can can sale this weekend too. So much broth, beans, and canned veggies in my cabinets now!

  • I didn't know which states had Shoprite...is it only in the northeast? @redneckmomma25‌, the Shoprite by us is crazy, too, and a couple of towns away so we only go when the sale makes it worth it. We have shelves in the basement that now look like a mini-Shoprite.
    I'm in NY...not sure how far spread they are....

    I think so. We are in CT. We went late Friday night so it wasn't crazy.

    I'm with Katy, if I don't plan out meals and know what I'm shopping for it's usually a waste of a shopping trip. I'm not against shopping more than once a week, I like my produce as fresh as possible, but I hate spending too much time or money wasted at the store. It also helps DH and I stick to a healthier way of eating.

    Tonight it's french dip sandwhiches and ceasar salad.

    No particular order for the rest of the week but will include,
    DH's spaghetti(his is always better than mine), mild Italian sausages and peppers, chicken stir fry and jasmine rice, breakfast scramble, meatloaf and chopped salad.

  • Even with a meal plan I have a hard time sticking to a list. But it's also hard to plan out 3 meals a day 7 days a week sometimes. I like a variety for DD especially with fruits and veggies but everything is hit or miss with her. So I'll grab a few options for breakfasts and lunches and such. I try not to waste as much as possible.
  • I haven't decided on what day would be what but tonight we had ramen (whoo) then for the rest of the week it'll be chicken alfredo, chicken bacon ranch pasta, meatball casserole, pigs in a blanket, fried chicken and gravy, and Mexican chicken wraps. I bought lots of chicken so I could use my new vacuum sealer I got for Christmas.

    Tonight: Grilled chicken and sausage kebabs with corn.
    Tomorrow: Crockpot beef stew with dinner rolls.
    Wednesday: Weekly date night - Dinner out
    Thursday: Marinaded pork tenderloin with roasted red potatoes.
    Friday: Either take out or I will do something easy.
    Weekend: We are heading down to my BF's for the weekend.

    I am an avid couponer and meal planning helps me better utilize my coupons and follow store sales. This week the meat I would usually buy is not on sale so I was able to pull from my freezer stash (I buy in bulk when the meat we eat often goes on sale). At the grocery store today I spent $70 for a family of 3, including a child who eats none stop. That includes breakfast for the week, lunch for the week, and 3 dinners.

  • For this week we planned:

    Breakfast: scrambled egg with cheese sandwiches (I make ahead and wrap in wax paper--we pull from the fridge and reheat).

    Lunch: leftovers from throughout he week

    Dinners:
    Sunday- chili with tamales
    Monday-sausage and tortellini soup
    Tuesday-hamburgers and gravy with egg noodles
    Wednesday-pulled pork with fries--crockpot
    Thursday-chicken lo mein
    Friday-Parmesan tilapia with rice pilaf

    I'm currently diagnosed GD so I will have to be careful with my pasta servings but I think I'll be just fine!
