Meal Plan Monday?

I've been so busy with the holidays and going back to work that I haven't posted this in a while. I'm still kind of figuring out plans for this week, but here's what I've got...

Rotisserie chicken meal from the store,
breakfast for dinner,
mini chicken pot pies,
grilled cheese and soup,
pizza for FI and DD1 a night that I work late,
parmesan chicken,
and turkey chili mac

Re: Meal Plan Monday?

  • tonight DH wanted pasta, but I really wanted breakfast for dinner, so I went ahead and made buttermilk waffles from scratch.  Lo and behold, DH wanders in and says "mmmm those smell good, I think I'll have waffles too".  good thing I'd been making a huge batch!  So that was Monday.

Tuesday: grilled cheese and tomato soup
    Wednesday: some kind of pasta
Thursday: pork or chicken with peanut sauce, rice and veg
    Friday: Maybe slow-cooker chili
    Saturday: perogies, ham and peas

  • Keeping it super simple this week. We're still trying to ease into post holiday meal planning...

Monday - lobster stuffed salmon roll (comes pre stuffed from the store, I just throw it in the oven) streamed green beans and DH will have brown rice (I'm not that into rice)

Tuesday - spaghetti (can't go wrong here) and caesar salad

Wednesday - baked chicken breast and streamed veggie and maybe baked potato

    Thursday - homemade pizza

Friday - sliders with a side of veggies

Sat and Sun - we usually eat leftovers/sandwiches for lunch and eat out for dinner both days.

Breakfast (all week) - either eggs, oatmeal, yogurt parfait or smoothie (sometimes we get crazy and have bacon)
