M-left over pork roast plus mashed potatoes and veggies
T-this is kinda funny: homemade tequitos and Fritos. My niece is staying with us and this is her contribution. I probably should have said no, but I'm just glad not to have to cook. It's from a hangover cookbook or something like that. Weird.

R:chicken tacos and pinto beans and maybe rice if I make it.
I am completely nerding out this week. I'm really excited about our plan. Over the break, we talked about how we have to shorten up our evenings and get the baby to bed earlier. So I dug in to some different options and found this cook ahead for a month of meals thing from a Rachel Ray magazine issue. Normally, I'm not a fan of her food, but these recipes pretty obviously aren't hers. So yesterday, I made a huge pot of tomato sauce to freeze, a huge pot of rice pilaf, and a huge pan of roasted peppers and onions. (I didn't do the chicken and pork she recommends bc frankly those sounded dull. I will use rotisserie or crockpot chicken and don't plan on making the pork recipes.). So for this week, we have:
Monday- Shrimp and Spanish rice using the tomato sauce and rice pilaf from yesterday
Tuesday- Leftover chili with Fritos and cheese (makeshift Fritos chili pie)
Wednesday- Mexican chicken and rice soup using the rice pilaf from yesterday and the roasted peppers and onions with crockpot chicken
Thursday- Leftover soup
Friday- Fusili with chicken and tomato sauce, using crockpot chicken and the tomato sauce I made yesterday
If anyone is intrigued, you can google one month of make ahead meals Rachel Ray. The one day of cooking wasn't bad at all. Other than putting the sauce on to simmer for 2 hrs, I did everything during nap time yesterday. Including washing the dishes.
No specific plans, but over the weekend, I made a huge dinner of sauteed chicken and mushrooms in a garlic, white wine, and cream sauce (used evaporated milk rather than cream) served over bowtie pasta. DH had 2 huge helpings, I had one smaller one, and there are 2 large portions left. So there's dinner for one night, or for DH for 2. The kids won't eat it.
I made a huge pot of chicken soup with leftover rotisserie chicken. Plenty for a few meals for DH and the kids.
I have a spaghetti squash, and will roast it to serve with chicken parm one night - probably Wednesday.
Friday-Fish (fish sticks for DS), mac and cheese and homemade coleslaw
Saturday-Pizza for DS's b-day
Also trying to clean out the freezer and pantry last week and this week. Let's see how much more I can clear out. After this week, I am going to be stuck with random things, like half boxes of pasta, rice, meatballs, soups and such. Might have to get a little more creative.
I'm cleaning out the freezer this week too. Didn't have time to go to the grocery store or Costco so we are eating what is in the cupboard until Sunday when I have an off day to shop.

We throw a pork loin in the crockpot with onions and barbeque sauce for pulled pork. It's awesome. Pulled pork sandwiches, baked potatoes. Yum.
My meal plan is a mess for this week. I'm eating cheese and crackers for dinner tonight, but I wanted to thank whoever posted the tomato and sausage risotto from SK a couple months ago. I made it last night and it was amazing!!
Tonight- Lasagna Tuesday- chicken parm w/ corn & garlic bread Wed- amjeddera (rice with lentils, served with yogurt and a tom, onion, parsley, cuc, lemon salad) Thurs- birthday dinner OUT Fri- grilled wings with mashed potatoes & mixed veggies Sat- baked chicken, okra & white rice Sun- usually a group decision made the day of. Probably grilled chicken or burgers with baked potatoes/French fries, naan and mixed veggies.
