Whole 30 Peeps

I saw a few people who are doing the Whole 30 challenge.  I thought maybe we could have an ongoing thread for food ideas.  I just read that you can now have white potatoes on the Whole 30!  I'm so excited!

  • Easy crockpot recipe is
    Big hunk of beef roast
    1 jar of pepperoncinis
    1 yellow onion
    Few garlic cloves
    Italian seasoning

    Throw everything in crockpot on low and let cook while I'm at work.

    How is the skin?  It looks pretty pale in the picture, but that gravy is tempting.
  • Also, does anyone have opinions on alternative flours or thickeners for Whole 30?  Like almond flour vs coconut flour vs arrowroot?  I've only tried almond flour before and I'm thinking of dredging some fish and pan frying it.
  • I've used coconut flour before for frying chicken strips. I also added shredded coconut (unsweetened) to give it a bit more texture. It worked great :)

  • I tend to stay away from alternate flours. Almonds make my belly ache, so I don't eat almond anything.

  • Anyone want to share their meal plan for the week?  We're starting tomorrow and I'm making a list and shopping today. 

    So far, I'm thinking Chicken breasts with a mushroom gravy and mashed potatoes.
    Maybe a pulled pork or sauteed fish with coleslaw.
    Steak with herb sauce and browned radishes.
    Probably some kind of fajita dish minus the tortillas.

    These all involve sauces and stuff, so I'm looking for quick ideas, too.

  • I'm not doing a whole30 right now but I liked to use buffalo sauce with chicken. You can dilute it with ghee or some homemade mayonnaise to make it less spicy. I would toss chicken legs with the sauce. Also you can shred some chicken and mix it with mayonnaise and buffalo and make a chicken salad. Another meal I liked was making cauliflower fried rice with coconut aminos. Nom Nom Paleo had a good recipe and I put shrimp in it. Honestly, I ate a ton of salads. I always had either a palmful of shredded unsweetened coconut or half an avocado with every meal. If I think of more I'll add it later.

  • I'm not really doing whole 30, but my life is nearly whole 30 so I'm busting in.

    This week I have a roast with sweet potato and carrots.
    And asian salad: a half bag of cole slaw, half bag of broccoli slaw, cubed chicken, mandarin oranges, avocado, grape tomatoes, craisins, (and nuts when I can eat them.) dressing = rice vinegar, sesame oil, orange or lime juice, sea salt, garlic pepper.
    And probably a chef salad with hard boiled eggs, ham, tomato, romaine, carrots, celery, and avocado. Dressing = honey, mustard, olive oil, lemon juice, s&p.
    Sweet potato and veggie crustless quiche is a good option too if I decide I want something hot.
    Oh, and soup! Soup rocks the whole 30. Veggies and meat, that's all you need. Or add coconut milk and curry paste for a great Thai soup.

    Actually meatloaf and roasted Veggies is a pretty kickass whole30 meal.
    Whole30 is 30 days of real food - no grain, no legumes, no sugar, no dairy, nothing from a package. Just fruit, veggie, meat, and seeds.

  • I love Melissa Joulwan's blog The Clothes Make The Girl for Whole30 recipes. Both of her cookbooks (Well Fed and Well Fed 2) have tons of amazing recipes and about 99% of them are Whole30 approved, I think one or two recipe in each is off limits because they qualify as a dessert-like dish. Just made her Deconstructed Gyro Salad tonight...it's one of my favorites.
  • I'm not whole30, but a lot of my meals this week are easily adaptable. We're doing Chicken Tikka Masala (I make rice with it, but it would be really yummy on sweet potatoes), veggie burgers with potato wedges, Cobb salad (clearing out the fridge with this one ;) ), slow cooker burrito bowls, and TJ's chicken (probably with lentils or potatoes :) )

  • I started on Thursday. I've been cooking through Nom Nom Paleo's book. So far I've made the chicken nuggets, cracklin' chicken, spicy tuna cakes, and tonight was slow cooker chicken with gravy. I plan on making the Kalua pork later this week as well as Paleo By Season's burgers with with spinach and sweet potatoes. I also threw together some stuffed peppers for lunches this week. This is my first Whole30 while pregnant so I'm interested to see what kind of results I get.

  • We didn't go grocery shopping last night and instead ordered take out for a last hurrah.  There's nothing Whole 30 for breakfast here.  I'm tempted to eat the cold Chinese food. So hungry.

    Sweet potatoes and avocados are your best friends.  When I did whole 30 while nursing, I "cheated" and had oatmeal every morning.  I know it's a grain and a whole 30 no no, but I refuse to say it was wrong.

  • So tonight I used that nom nom paleo crock pot chicken recipe for inspiration and made a chicken in my Dutch oven with the same gravy.  It was awesome.  I put lemons inside the chicken and I think it added to the gravy.

    Then I made scalloped potatoes by slicing potatoes on my mandolin, seasoning them with Penzey's Chesapeake Bay seasoning, pouring coconut milk over them and baking.  They were really good.  I think they would be even better with onions and nutritional yeast.  Now that I'm thinking about it, I realize I didn't read the ingredients on the seasoning.  I hope it's Whole 30 approved :)

    Oh yes, they are entirely different.  They make look alike, but different taste, different texture.  Trust me on this.

    We just eat the hell out of them. I'm sure if you were ambitious you could do some cauliflower rice or something.

    Ooooooh.  I will check that out.  I've looked at some recipes on there, but not current stuff.
