My H LOVES gingerbread cookies, muffins, bread you name it. He suggested maybe we could make a ginger dessert for Christmas. I like the idea of something a little different then our normal.
Do any of you lovely ladies have a great recipe?

Gingerbread Lemon Cream Sandwich Cookies
Ingredients
Cookies:
2 cups flour
2 tsp ginger
1 ½ tsp cinnamon
½ tsp baking soda
½ tsp baking powder
½ tsp salt
¾ cup butter
½ cup granulated sugar
½ cup packed dark brown sugar
¼ cup molasses
2 tbsp applesauce (or substitute 1 egg)
½ tsp vanilla
Lemon Cream Filling:
2 cups confectioners’ sugar
¾ cup butter
4 tsp lemon juice
1 tsp lemon zest
Directions:
1. Preheat oven to 350
2. Mix flour, ginger, cinnamon, baking soda, baking powder, and salt together. Set aside.
3. Beat butter and both kinds of sugar together until light and creamy, approx. 3 minutes with an electric mixer.
4. Add molasses, vanilla, and applesauce (or egg), and mix well.
5. Reduce speed and gradually beat in flour mixture.
6. Shape dough into 1-inch balls and place onto parchment paper lined cookie sheets. (makes about 74 small cookies)
7. Bake for 10-12 minutes (or 8-10 if using egg)
8. Cool on cookie sheet for a few minutes, and then completely cool on wire racks.
9. For the filling, combine the confectioners’ sugar and butter in a mixer until well mixed. Add lemon juice and zest and beat until uniformly mixed in.
10. Sandwich approx. 1 Tbsp of the filling between 2 cookies.
11. Refrigerate until set.
