Grated potatoes (approx. 1 pound worth)
1 small grated yellow onion
1 egg, beaten
1/4 cup matzo meal
1/2 tsp baking powder
Salt and pepper
Peel and then grate the potatoes and plunge into ice cold water.
Dry the potatoes and wrong out with a paper towel so they are super dry.
Combine all ingredients together. Fry in hot oil (I make mine about 2 tablespoons big) until golden on both sides.
These will likely take over the week- we love them! I use the same recipe as his mom but I swear hers are the best lol!
