  • Sunday - chopped greek salad
    Monday - Mediterranean Shrimp and Pasta
    Tuesday - flatbread pizza with side salad
    Wednesday - Homemade chicken chili burritos
    Thursday - Nicoise Salad (this is something we had on our honeymoon and have been talking about making ourselves forever - so excited to have this on our menu).
    Friday - Fish tacos
    Saturday - spaghetti with ground chicken meatballs.

  • I need this in my life. My issue when I've tried this in the past is that I tend to not feel like eating what I had planned. I know it's all in my head :( 

    On Sunday's I sometimes make a large casserole (healthy as I can) that I eat for the week at lunch and then dinner is usually a chicken salad. I also get MH to grill me enough chicken breasts or pork chops so I can have that for the week. I will make a whole boat load of veggies to go with it.

    I tend to do well during the week eating wise but the weekend I am so very horrible.  
    I am not sure how to say this without getting a "solicitation" warning so I guess I just say that I am not longer active on THIS site. 



  • I've been wanting to do this for awhile. My problem isn't the not wanting to eat it but I sometimes I come home from work and just don't want to cook. I'm thinking of starting to do all prep work on Sunday's so then everything else is easier in the week!

  • Yay, it's been a while since we shared these!!

    Monday : Butternut squash lasagna

    Tuesday : on the road food.  Going to Hershey for their holiday event!  So probably bringing some veggie and hummus and string cheese.  Not much of a dinner, but healthier than what I could find in the park.  And safer for me.

    Wednesday : asparagus and lemon butter foil baked salmon

    Thursday : BBQ chicken stuffed sweet potatoes

    Friday : Food salad!

    Saturday : Salsa shredded chicken

  • This is awesome! I love meal planning (and may spend a good portion of my time at work on Fridays planning out the next week).

    I'm currently cutting out gluten (last month it was dairy) to try to isolate some health issues. Here's my menu for the week:

    Monday: Crab cakes (made with GF bread crumbs), squash, zucchini
    Tuesday: Shepherd's pie (with mashed cauliflower)
    Wednesday: Cauliflower rice Jambalaya
    Thursday: Chicken lettuce wraps
    Friday: Grilled fish and collard greens
    Saturday: any leftovers
    Sunday: Pot Roast with root vegetables

    @rslh10 - here is a recipe for one we have done Greek Chopped Salad with Chicken
    What we did this week is made it without the chicken and did not dress it so we could put haf of it in the fridge for the next day. We have also used chopped up salami in place of the chicken.

  • @kateisoptimistic I have an obsession with spaghetti squash. DH asked that we take it easy on it this week (we had it 3x last week), but I'm a little sad about it...

  • Good morning, ladies! I don't have the whole week planned out but know I will be making:
    • hamburger casserole (with egg crust)
    • dairy-free potato leek soup
    • some type of chili (prob habanero) 
    And yes, I said "I" will be making b/c if I cook the hubs cleans  =)

I mentioned it on another recipe thread a few wks ago - the ones I get are made from yam starch but they have tofu versions as well. SUPER low carb and pretty tasty! My grocer carries the fettuccini and spaghetti cut...I used the fettuccini ones to make a pot of alfredo before. They came out "ok." I think these noodles work best in Asian dishes though - made Pad Thai w/ the fettuccini noodles and some Pho with the spaghetti noodles. They have a little bite to them so if you don't like aldente pasta, you might not find these palatable ;)
    For Cauliflower rice I just chop raw cauliflower in the food processor until it is the consistency of rice.  I then saute it for maybe 7 minutes to to soften a bit with whatever seasoning I am making it with - so could be garlic onion and parsley, or a little soy and ginger, or a couple of spoonfuls of salsa.  I then top with veggies or serve as a side with whatever else I am making. 

    I've tryed the shirataki noodles - the consistency is a little funny so I agree they work the best in something like a pho.  I like them with a peanut sauce too! 
    @agpt413 My recipe is very similar to @kateisoptimistic. Sometimes I will use a cheese grater on the cauliflower (if I don't want to clean my food processor). I saute coconut oil, garlic and onion for about 3 minutes before adding the cauliflower. After that base, I add in whatever else with it. I've made fried rice that was really good, and I'm trying Jambalaya this week. 

    I've never tried the shirataki noodles. They sound great in pho!
  • Meal planning threads are awesome and end up inspiring me to make changes to my plan!  We use leftovers for lunches the next day.

    Monday - Pesto chicken with jasmine rice and roasted veggies

    Tuesday - Crockpot lentil soup & roasted chicken over massaged kale

    Wednesday - Crockpot beef stew with roasted root veggies

    Thursday - dinner with friends

    Friday - Turkey chili with whole wheat sharp cheddar biscuits

    Saturday - Chicken Tortilla Soup

    Sunday - Braised lamb shanks over mashed potatoes with garlic and leeks

  • @MrsOscarFelix‌ the not wanting to cook is usually my problem too. But here's what I have:

    Tonight: mushroom, sausage, spinach soup
    Tuesday: turkey, spinach salad, baked sweet potatoes
    Wednesday: I have my hysteroscopy, so dh promised me nachos.
    Thursday: Grilled chicken, quinoa & veggies
    Friday: girls only holiday party with my family.
