Toddlers: 12 - 24 Months

Stressed about food!

I know this has probably been posted so I apologize.  
Does anyone else find the nights most stressful and chaotic with all the preparation needed for the next day?
I am working full time and have to pack my 14 month old's food for the next day each night - between daycare and his grandmothers.  I just like to provide the food at his grandmothers to alleviate that duty from her and also to control what he is eating. 
It's just so hard coming up with ideas and the prep is just so time consuming.
What am I missing?  Does anyone have tips?  He is a pretty good eater, but randomly will decide he doesn't like something one day - aka mac and cheese. 
Just want to make sure I'm not the only one in this boat and any easy food ideas you guys have!  Thanks in advance!

  • I've never had to do food for daycare but DD1 has recently started staying full day at preschool and requires a lunch. She almost always gets leftovers from dinner.

  • My daughter just turned 1 so probably not eating the same things but I tend to give very similar things every day. If there is something that requires cooking I usually make it on the weekend and keep it in the fridge to be pulled out and packed into a to go container (i.e., pasta, beans) otherwise most of the stuff I send is pretty basic (fruit, cheese, bread, fruit & veggie pouches, dried snacks). I dont know about prep taking a ton of time. I usually just try and get up about a half hour before she does and pack her bag in the morning. We are still working on expanding her menue however so that might be a big difference from your situation. 
  • I also do leftovers, PB&J, hummus with veggies or pita bread, mexican rice and black beans, edamame and sushi (either from the restaurant or grocery store- my kids love the snow crab and veggie rolls), spaghetti, and when all else fails or I have no other food in my house, I'll send a hotdog or chicken nuggets.

  • Yes, I am a full time working mom and I plan DS's meals for the day as well.  I find it a little difficult not to become to repetitious at this age (my DS is also 14 mo), because there are a limited number of foods he can handle in terms of being soft enough for him to chew well, that are nutritious and that he likes.  Usually he has a chopped / semi-pureed chicken and veggies meal, pasta w/ meat sauce, turkey meatloaf w/ potatoes, blended stew.  We use things like quinoa and polenta as a base, sometimes rice.  He eats frozen veggie soufle, occasionally has frozen chicken / broccoli / sweet potato nuggets chopped into small pieces.  

    I would love to start a thread for moms to list their favorite toddler meal recipe or link for recipes.

    Heartbeat on U/S at 6w1d!
    Baby,please stay!!
    Our miracle baby boy arrived 10/2013!  We are so in love!!

    Our second daughter arrived in May 2015!  We are so grateful!

  • That would be awesome, Dahlia, if we could start at thread with recipes and food ideas.

    I also find myself being repetitious with his food.  He also makes it difficult when he won't eat chicken...only chicken nuggets, sometimes. Frustrating!
