What's for dinner this week?

Come on girls. Give me your weekly menu. It is raining and I have the flu. I don't feel like planning myself so I am hoping to steal dinner ideas from you guys. Help a sick girl out.

  • Monday - Veggie Burgers and Green Beans
    Tuesday - French Onion Soup with Garlic Bread
    Wednesday - Eggs, Veggie Sausage, and Pancakes
    Thursday - Going out for date night
    Friday - Veggie Kabobs and Steamed Rice

  • Next week is a hot mess thanks to work holiday parties and stuff. But I will give you this week's:

    Mon - Marinated chicken thighs, rice, asparagus
    Tue - Pork tenderloin with fried potatoes
    Wed - Sausage, kale, and potato soup
    Thur - Sausage and peppers and onion hoagies
    Fri - Chicken fajitas

  • I don't have it all planned yet but I'm thinking:
    Turkey burgers/fries
    Skinnytaste chicken franchese and salad
    Spaghetti and meat sauce
    Beef stew

  • Shepherd's pie with brussel sprouts
    Stir-fried Napa cabbage with brown rice
    Colcannon (with kale instead of cabbage) with carrots

    and we'll see from there. I don't tend to make much of a menu plan. I just cook by working with what needs to be used up from our farm share.

  • Our new fridge is getting delivered next week, and I don't want to go grocery shopping before it gets here, so this week's meals are all about using up what we already have in the house. We usually have some sort of salad to go with dinner.

    Pasta with vegetable marinara sauce
    Stir Fried Cabbage
    Egyptian Kusherie (spiced rice,lentil and caramelized onion dish) with flat bread
    Tostadas
    Sesame Noodles with spicy peanut sauce and whatever random veggies we have
    Potato Vindaloo with brown rice


    We have similar cooking styles! I'm stealing the potato vindaloo idea. What recipe are you using for that? I have so many potatoes right now.....

  • I just busted out the new Skinnytaste cookbook, so all of this week is courtesy of that.
    Sunday: roasted salmon salad with caper vinegrette
    Monday: chicken, quinoa, and avocado soup
    Tuesday: Mongolian beef and broccoli over brown rice
    Wednesday: chicken Milanese 
    Thursday: shrimp and grits

    I'm not sure what days we'll have what yet.

    Thanks! Hah, your list is all stuff I make regularly (or make something similar).

    That blogger said she based the recipe off of Yotam Ottolenghi's book "Plenty." I don't have that book but I have "Jerusalem" by the same author and I loooooove it! Totally recommended. (ETA: and it has a lentil-caramelized onion dish in it that sounds similar to the Kusherie)

    What are you doing with your cabbage specifically? I am blanching and then stir-frying with brown rice vinegar per Fuschia Dunlop.

    Today maybe a rotisserie chicken and potatoes.
    Tomorrow night leftovers
    Tuesday-dinner at my parents
    Wednesday-probably take out (Reese is having surgery that day)
    Thursday and Friday I am on my own. :)

     BFP on Cycle 17 09/27/12. EDD 06/04/12! Please Stick Baby! A/S 01/22/13 Baby looking great. Officially TEAM BLUE! Jack is getting a Baby Brother! RCS scheduled for 05/29/13. William Daryll born at 9:59am on 05/29/13. Left ovary and tube removed due to peach sized tumor found during RCS. Pathology came back benign!
