SS because it's a toss up between shortbread and "ritz cookies." Ritz cookies are two ritz crackers with peanut butter between them and dipped in white chocolate.
My mom makes these little wafer cookies. They are like a flaky, sugar wafer with frosting in between. They are the best!! I need to learn the recipe because now I want to take some to work.
Every year, my Nana burns a dozen chocolate chip cookies and they're just for her and I. I asked her about them when I was a teenager and she told me that when I was 2, we burned the first batch I ever made with her by accident and I was a hot mess over "ruining" the cookies. She told me they were her favorite kind to make me feel better and we ate the whole batch together. She still swears they're her favorite whenever anyone asks her.
She's "accidentally" burned a dozen of them every year for the past 25 years

I make my MIL's butter cookies almost weekly this time of year. I also add Andes Mints to chocolate chip cookie dough and dye them green. I call them grinch poop.

They don't look like much but they are amazing. They freeze perfectly, too, so they can be made well in advance. And they're pretty good frozen, as well!
Actual themed christmas cookies I like gingerbread cookies.
But I like making my favorite at christmas time which is peanut butter cookies.

Chocolate chip cookies will always be the Kings of cookies. However... I'm adding a couple "candies" I make this time of year to go with my Christmas baking because I'm a rebel.
Chocolate fudge. There are super easy microwave recipes but the kind with marshmallow fluff is pretty awesome. Either way. Fudge is magic and I only indulge this time of year.
Homemade caramels. My mom makes the best. You have to stir and watch the thermometer like a mo-fo but so worth it.
I loooove the frosted cut out ones!! My all time favorite are Biscochitos though.

Can your mom make me some homemade caramels? I LOVE CARAMEL but I don't think I have the patience.
Fudge is another one in our family! We use a microwave recipe with chocolate chips, a can of sweetened condensed milk, vanilla, and salt. SO easy, so reliable.
The only thing that ALWAYS means Christmas to me are stained glass window sugar cookies. You know, the kind that have melted lifesaver in little windows.
I remember having them as a kid and how magical those shiny little windows were. I don't have then very often, but they're my strongest Christmas cookie association.
Hahaha. You're just missing the Pineapple Express. It might be decent while you're here.
To be honest, there's not much to see in Nanaimo. It's a blue collar town based around logging. It's not especially big or exciting (80k people, maybe?). All of the fun stuff is all up and down the island. It's a good place to work and live, but not much to do for tourists.
I love making sugar cookies with crushed up candy canes on top. The candy canes melt when baking and make a crunchy texture on top of the buttery cookie. Mmmmm. This thread has convinced me to do some baking this weekend!
Although I actually live just south of Nanaimo in a much smaller town. I just commute here for work - which is why I'm in the lab here. It's across the street from my office.
Omg I'm going home and making cookies after work:) loving the inspiration ladies! I'm thinking I definitely have to make Nanaimo bars. thank you @CogDis they are my fav too!
My latest creation is pumpkin chocolate chip cookies:) they are so amazing! Will prob make those after work too lol!
I love all Christmas cookies. Every year my mom and sister have a cookie baking day. We make several kinds and have an army of cookies on the counter tops by the end of the day. Right now we have a cookie Pinterest board going.

Little bro makes the best frosted sugar cookies. There's sour cream or something random in there that makes them soft, chewy and wonderful.

I've always wanted to go to Nanaimo!
I'm going to be just across the strait from you in a few days (in Vancouver). :-) Hopefully you can stay dry and things don't flood!
And I'm kinda embarrassed to say that I have never encountered a single thing that is too sweet for me.
