I've been excited about this post -- first and foremost, thank you to whoever posted the dijon/garlic salmon recipe in this thread a few weeks ago!! OMG IT IS SOOOOO GOOD! My baby is thankful for the Omega-3's, too.
Sun - parmesan crusted chicken + green beans + rice pilaf
M - dijon/garlic salmon + broccoli + rice pilaf
Tu - rosemary chicken/mushrooms/red skin potatoes in cast iron skillet + green beans
Sa - steak + sides TBD -- hubby's night to cook (he works like 70 hr/wk so I do most of the cooking now that I've finally figured out how)
Sun - date night out

Question: does anyone have ideas for carb sides other than potatoes or rice? And if quinoa... I like it, but any ideas on how to prepare so it has more flavor? I just steam it now like rice & it's good but H thinks it's too bland.

Quinoa - cook it the traditional way in a pot (there should be instructions on the bag/box) but use chicken broth instead of water.
Barley - cook the same way as quinoa above.
Polenta - I buy it premade in a roll. (Can usually find in the natural/organic section). Just slice it in 3/4" thick slices, sea salt and fresh cracked black pepper on top, then bake for 5-7 min on 350.
French green lentils - cook using Chicken broth, minced garlic, and lots of herbs/spices of your choosing.
Black beans and rice, or rice pilaf - tons of recipes online, gives a nice break from plain rice. (Eta - I see you do rice pilaf already, scratch that!)
Side note: I make my own sodium free chicken broth by poaching chicken breasts - 3 Breasts, 10 cups water, herbs of your choice (I typically use garlic powder, onion powder, basil, oregano, a little chili powder, white pepper, sage, marjoram, 2 bay leaves, and whatever else comes to mind). Boil the water, add the spices, then add the chicken, cover and simmer for 45 min). I use the chicken for whatever recipes (salad topping, cube for soups, shred for tacos/casseroles, etc.) and then I use the broth for cooking side dishes and soups, and I'll freeze broth in 1-2cup portions to have for ready use later.
I do this because I like to use broth a lot and limiting sodium is important to me because my toddler eats the same food we do.
So i have been wanting to meal plan for a while but have just failed miserably at it. Thanks for this thread for ideas and also a reminder to get my butt in gear. I hope to get it together and have a plan to share soon
Sunday-French fried onion chicken (like the French's fried onion things you use in green bean casserole). Recipe on back of package. Take 4 chicken breasts and dip in 1 beaten egg. Add 2 tbsp flour and 4 oz of the fried onion things to a ziplock bag (package of onions says 4 oz, 2 cups, which really makes no sense to me, I just used what was leftover from thanksgiving). Put the egg dipped breast in the bag and coat. Bake at 400 for 20 min or until chicken is cooked. Took mine about 35 min. I served with baked potatoes and green beans.
Monday-2 timing pasta bake- So easy. 1 box penne noodles, cooked, then mix a 24 oz jar red spaghetti sauce with a 15 oz jar of Alfredo sauce. Add 2 cups mozzarella cheese to the sauce, then add the noodles until coated. Bake at 350 for 20-25 min, then add some Parmesan cheese to the top and bake 5 more min. I serve with salad and garlic bread.

W: Crockpot Chicken Fajitas (I just throw in chix breast, two peppers and one onion and a package of fajita mix and cook on high for 3-4 hours)
Th: Sloppy Joes and French Fries
F: Broccoli and Cheese Stuffed Chicken with Mashed Potatoes
