It's just me all week, so I'm eating a lot of fish because it's fast and easy and husband doesn't like fish anyway. Tonight I'm doing foil baked salmon, asparagus, and buttery noodles with a salad.

I love fish. We make it pretty often actually. What do you season your salmon with?
DH and I have rehearsals all week so we'll be eating out most every night. I'm trying instacart for the first time today though! I'll let you know how it goes
Man! Look at all of you so organized and prepared! By the time I get off of work at 5:30pm and get home, it'll be at least 7:00pm. I'm thinking Panera so I can get chicken noodle soup and grilled cheese. I'm can't wait to get rid of this cold!
I didn't realize you were sick! FX you feel better soon!
Skinless sausage, green pepper, onion and diced tomatoes stewed with a little olive oil, salt and pepper!
Oh yum! Have you ever put fennel in your sausage? So yummy!
My H made breakfast sausage once that had fennel in it! I didn't care for it, but he loooooved it so much. Needless to say we buy two kinds now LOL!
hahaha
that sounds like us actually
We're really competitive when it comes to sausage. It's because each of our families make/made their own and depending which part of italy you're from will predict the contents. So, clearly my family and me are all about the fennel while his family poo poos are fennel and swears by chili pepper.
oh my gosh my mouth is watering! I have a fall back thai curry noodle soup recipe that we're having tonight. Its probably my favorite meal and SO easy and cheap!

For the foil baked salmon I usually just stick to salt and pepper and sometimes old bay. I squeeze some lemon juice on it and top with a pat of butter before wrapping it in the foil. It comes out so tender and yummy!

I totally forgot to take some meat out of the freezer. I think I will make an appetizer dinner, I have samosas, pork dumplings and moroccan beef cigars in the freezer.
@sarcaztic10 Oooh yum! Homemade Chex Mix is pretty easy - and hard to mess up. I like playing with the seasonings in it - more garlic and onion, and then I put some chili powder in to add a little spice - DH loves spicy things. Good luck!
@CFearsy Oh Panera...yummmm. We have one opening soon in my city. It's been sitting there, taunting me - cannot wait for it to open! Feel better!
AFM...going to rock some Kraft Mac & Cheese tonight. Hubs is away, so I'm all by myself. Also on the sick boat, so quick and easy is the name of the game tonight.
OMGERRRRR! Kraft macaroni and cheese!! That sounds so good. Am I allowed to change my answer?? :P
I sautee' one small onion (roughly chopped), 4 cloves garlic "(fresh, minced), two "thumbs" ginger (fresh, minced), and 2-4 thai peppers (depending on how hot you like it! fresh, diced) in about a tablespoon of olive oil until translucent.
Then I add two chicken breasts worth of shredded precooked chicken (I either cook a batch early in the week, use a rotisserie chicken, or use canned chicken). I cook the chicken with the peppers for about 5 minutes.
I then add 1 can of unsweetened full fat coconut milk, three cans of water, and 3 tablespoons of a liquid chicken bouillon (any bouillion would work). I then am super generous with curry powder, turmeric, paprika, and chili powder. Heat liquid to boil for 3-5 minutes, then I lower the boil to a medium boil. I stir in 2 eggs with a whisk so they thicken the soup. I love eggs. (sometimes I also serve a soft boiled egg on top!).
Finally, once the soup has been boiling for 5-10 minutes I add ramen or rice noodles (depending on what I have lying around) cook for three -five minutes and serve with fresh cilantro on top.
(this soup can easily become a tortilla soup by using jalapenos instead of thai peppers, and cutting the ginger/curry/turmeric/coconut milk. I then will add canned tomatoes and green chilis!)
ETA because no coconut milk in tortilla soup plz thx

KD is forbidden in this house (
-------------
Calling it KD is SOOOOO weird! @Amybunny30 taught my that and even showed me pictures of the box! But the more important question is WHYYYYYY is it forbidden, @PinkCamino?!
MIL fucked him up.
He was very sheltered food wise until he met me. So, all condiments (ketchup, mayo, mustard, relish) were totally foreign to him. He had never eaten chinese food, sushi, indian food. Basically he grew up eating italian food 100% of the time.
He's come a long way - he now eats everything above no problem. But, Kraft Dinner is still a no-no. He "tried" it once, snorted at the color and then ended up getting a migraine. Just the smell makes him dry heave. So yah, not KD in this house.
I totally forgot to take some meat out of the freezer. I think I will make an appetizer dinner, I have samosas, pork dumplings and moroccan beef cigars in the freezer.
where do you buy this deliciousness?
@pinkcamino I get thema ll at Zehrs (loblaws your way?) in the frozen section. The samosa are a PC ver samosa. and the cigars I believe are PC as well. The dumplings are not, but are in the same section.
are they potstickers? I've bought some frozen dumplings and wasn't crazy about the filling. I'm weird about those things.
I am making chicken pot pies for dh and vegan pot pies for myself. They are cute in mason jars.
Those are so stinkin' cute! What size Mason jars do you use? And how do you make this happen?
I need to know this!
We are probably going the leftovers route. I'm still not feeling so hot after my company Christmas Party on Saturday. Though, we do have some left over Italian Style-Cheesy meatloaf that was amazing!
I just got home and am making super easy kung-pao chicken. Best part? It's about 5 min hands on...and 30 min hands off :-)

I feel so worthless in these dinner threads and I feel bad for MH because I just don't cook. So dinner was the other half of my steak that MH grilled yesterday with stir fry veggies and a salad. I did make MH a baked tater though... So pathetic lol
I am not sure how to say this without getting a "solicitation" warning so I guess I just say that I am not longer active on THIS site.

Mr. Bug has decided that he would like to try the Mediterranean Diet (which is amazingly close to what we were already doing . . . ) so, we are having a chopped Greek salad with chicken for dinner tonight.
I just got home and am making super easy kung-pao chicken. Best part? It's about 5 min hands on...and 30 min hands off :-)
Recipe: Makes 6 Chicken and 6 Vegan wide mouth half pint mason jar pies.
Filing:
3 chicken thighs
1.5 c soy curls
1 c celery diced
1 c carrots diced
1 c onion diced
1 leek approx 1/2c chopped
1.5 cans coconut milk 22.5 oz
3 russet potatoes
2 tbls olive oil
2 tbls flour
1 tbls better than boullion no chickn base
1 tbls herbs de provance
1 tsp thyme
1 tsp white pepper
Pinch of salt
Fresh ground pepper to taste
Because I am making this for two different diets I cook the chicken away from everything. Boil chicken in salted water for 10 to 12 min. Remove from heat dice and set aside. Reconstitute soy curls in warm salted water. I broke the soy curls before soaking, it seemed easier thn chopping later. Boil potatoes in salted water till just soft. In a large pot heat oil. Chop veggies. Add to pot with a pinch of salt. Cook until soft add herbs and coconut milk and cook down approx 5 min. Sprinkle flour and I mean sprinkle or you will have disgusting clumps. Split mixture in half and add meat.
Pie crust family recipe: make 2 batches. They need to be done seperately they don't come together otherwise.
2 c flour
2/3 c crisco
1 tsp salt
8 tbs water
Prepare at least an hour before you need it.
Mix flour and salt. Use your fingers no tools needed. Add crisco bury it in flour and pinch small pieces of shortening continue process until total mix is crumbs. Add water. This is where everything can go wrong add 6 tbls of cold water mix by hand if it does not easily come together add another tbls. Repeate as needed. Refrigerate for at least an hour.
Roll out pastry. Use mason ring to cut 12 tops. Use remaining dough to fill jars presskng everything tightly together. Add filling leaving an inch from the top. Cut vent using a small cutter, fork or knife whatever works for you. Use fork to press the top to the sides.
Place ina cold oven set to 350 degrees and cook 45min to 1 hour.
Let cool 20 minand enjoy.
@rubysi: Thanks love!!! Excited to try it out this weekend!
