Attn: My gluten free lovelies!

@souptin‌ and others that I can't recall. I just made some amazing cookies. Chocolate chip peanut butter. They are extremely simple and even my DH was impressed.

1 c. Sugar
1 c. Peanut butter
1 egg
1/4 c. Chocolate chips

Mix all together, roll into tablespoon sized balls and place on cookie sheet. Flatten a little with fingers or spatula and bake for about 8 minutes.

Let cool for about 5 min on sheet then transfer to wire cooling rack.

  • Bless you @kayneg924 :) I'm sensitive to almost all things that are the base for most cookies, but not peanuts! This is a wonderful idea!

  • I've made cookies just like these before even though I'm not GF and they are delicious! Definitely need a glass of milk to accompany them though.
  • I think next time I will use natural peanut butter, I used jif today because that's what I had, in order to cut down on the sugar but I really liked they way they came out. I am not gluten free and was just looking for an easy recipe for a cookie exchange party. I'm pretty sure these may become a go to since they are so simple. Glad you enjoyed them soupy ;)

    LOW ON PB?!?

    How does that even happen? its like toilet paper in my house...not something we would EVER risk running low or *gasp* out of.

    I think we generally keep at least 3 "safety" jars of it around....you know..just in case.


    I even keep a jar in my locker at work!
  • @souptin‌ it's one of those foods that have been hot and cold while pregnant. Beforr i got pregnant, i was the same. Apples and pb are like my favorite snack... not so much now. I do still enjoy it in small quantities, like on toast or a bagel. And well, cookies sound devine rn. Haha.
  • Yeah, this baby has really messed with my food intake. I want all the protein in the form of red meat. I don't get it. Haha.

    So what peanut butter do you keep stocked? I have two favorites personally. ...and i can't remember the names of either. Holy crap. #-o
  • I remembered! It was the Skippy natural with honey and then the Peanut Butter & Co Mighty Maple. Maple sugar in the pb. Soooo yummy.
  • I believe the original recipe didn't have chocolate chips. I'm sure it's good without but the recipe I found had added them and who doesn't love pb and chocolate!
