Pumpkin

I have a pie pumpkin that I need to use.

We have a pot luck style beer party tomorrow.  I need a recipe to use this up.  Pumpkin bread?  Bonus if it uses beer in the recipe.

Help.

  • Soup and pie were all I could come up with. And I coulnt figure out how to out beer in them. Maple wins as per usual.

    There will be plenty of that.

    We have 4 big bottles, a 4 pack, and a 6 pack to take with us. I may need to taste test one from the 6 pack. You know to make sure the quality is good.

    What if the pack didn't all get brewed in the same batch? Better make it two to be sure.

    Sooo... I asked DH about beer and pumpkin and he said pumpkin brûlée. He was kidding, but then we thought about it and realized that you could make a caramel layer with stout or porter, then the pumpkin custard, then the burnt sugar layer. You're welcome.

    I don't have a kitchen torch. And that's what makes this dish fun. Not to mention I don't have ramikins.

  • I like making apple pumpkin curry. It's wonderful. Not sure you'd want to put beer in it though.

  • I think you could replace the liquid in a pumpkin bread recipe with beer and it would turn out well. Something dark and spicy might play well with the sweetness of the bread and the spices in the pumpkin bread. I usually use OJ for the liquid, but I might try beer next time.

  • Speaking of pumpkin... I have roasted pumpkin purée and want to make it soup. Can I just heat it up with some chicken broth? Do I need to add coconut milk? What spices? I'm serving it with bacon and cheese quesadillas and roasted asparagus if that matters.

  • I've seen them call for like pumpkin pie spices like ginger and cinnamon. Would that make it too pie-y with the coconut milk? What herbs would you recommend?

  • I use coconut milk when I make apple pumpkin curry soup. I purée the apple and stir it in with the pumpkin and milk. I add curry, onion, and a touch of cloves. It's so good.
