We had Turkey sandwiches at DH's parents the day after thanksgiving. I flew out to my dad's right after the weekend but DH had to come home for work so he packed up lots of the leftovers to use for lunches that following week.
we brought home leftovers from the ILs. We have been eating them as is, but tonight I am putting them all together in a pot pie/shepherd's pie/casserole type thing and chucking whatever doesn't fit.
We didn't cook thanksgiving but there were scant leftovers that were mostly just eaten with salad stuff for a couple lunches.
DH and I took advantage of super on sale turkey this weekend and cooked a big thanksgivingy dinner that we're mostly eating as is plus a few turkey sandwiches. I loooove thanksgiving food.
My husband loooooves "warned ups" so we bring a bunch home and I think they are almost gone by now. My MIL makes a huge meal for the five adults, so there are always plenty.

I turned the rest of the meat into a turkey tomato sauce for pasta, and we ate some as-is for leftovers and sandwiches.
