I do a casserole too. It's cooling on the rack now.
Chopped some onion, celery, carrots, and sautéed them in butter. Chopped up leftover green bean casserole and Turkey breast. Combined ingredients with egg noodles, shredded cheese, and cream of celery soup. Topped the whole thing with crushed French onions, bread crumbs, and more shredded cheese with a drizzle of olive oil. Baked @ 350 for 40 minutes.
Forgot to add the bit of leftover gravy when I saw Apples post. Curses!

Do a layer of mashed potato instead of a bottom crust layer if you have leftover potato!
Turkey quesadillas (bonus points for smearing some mashed potatoes in there)
