Whenever I make a turkey, I love turkey salad,
diced turkey with celery and mayo. I also make a turkey soup by boiling
the carcass and bones until you get a nice broth, remove the bones and add diced
turkey, carrots, celery, onions and cook until the vegetables are soft.
Besides a croissant sandwich with turkey, cranberry sauce, havarti, and cream cheese, I like DH's Hot Browns. It is a Kentucky thing, I guess. Open face turkey sandwich with bacon, tomato, and a cheese sauce on toast. Yum!
I also like to make turkey enchiladas with verde sauce. Also a Shepard's Pie with the leftover mashed potatoes, corn, and gravy. I add in some chopped carrots.
