I planned pretty well in the last few days so that this week is mostly leftovers and easy stuff. Since we're hosting Thanksgiving I'll spend most of the week cooking and cleaning, and this way I don't have to also worry about dinner each night.

M: Enchiladas, rice, beans and salad
T: ?? Either soup and sandwiches, or we may cave to the In N Out craving that's been nagging me for the last couple of days :P

Leftover spaghetti (spaghetti squash for me) and meat sauce tonight, mexican (probably tacos?) tomorrow, then it'll be a mad dash to eat Thanksgiving and everything in our fridge because we're moving Sunday!
Monday- Black bean quesadillas with homemade salsa and guac plus some kind of veggie Tuesday- Spaghetti and meatballs, salad Wednesday- Bean and roasted veggie burritos Thursday- Thanksgiving
I only shopped through Thursday and am avoiding the stores until after the Thanksgiving madness is over.
My mom sent us home with what we call "Okra mush" (it's basically tomatoes, onions, bacon, and okra) and beans with sausage, so we will be eating that tonight and tomorrow. We might do breakfast for dinner tomorrow night too.
Wednesday - eating out with friends
Thursday - Turkey at my mom's
Friday - We are hosting another Thanksgiving with my in laws
Saturday - left overs
Sunday - Thanksgiving at my dad's.
With divorced parents and in laws, holiday meals are always multiplied.
Tonight - chicken pot pie Tuesday - apple cinnamon stuffed pork chops with green beans and mashed potatoes Wednesday- something easy - have lots of cooking to do for turkey day!
