So I have my first pediatrician interview set up for tomorrow (and then one more next week) and was searching around to see if I could find a good resource on what questions I should be asking since I am a FTM.

We just asked the ones we found most relevant. And I would definitely research on your own the questions that can be answered on the dr's website, by staff, signs, etc.
Other questions we asked particular to our situation: 1) Dr's view on BFing while on certain medications. 2) When we should sched our first appt (a diff ped is seeing the baby at the hospital bc of insurance issues)
