I made this chili mac last night and it was so easy and so good https://stlcooks.com/2014/01/crazy-good-chili-mac/. Both my kids scarfed it up which almost never happens. Definitely will be making it again.
Mon-Tortellini with grilled zucchini, bacon and breadcrumbs Tues/Wed Spinach and cheese quesadillas with black beans and yellow rice Thurs-Chicken cutlets with roasted butternut squash and potatos.
I made pork stew in the crockpot the last two weeks. It was a huge hit. 6 boneless pork chops, a can of cream of chicken soup, a can of cream of mushroom soup, 1 lb of small red potatoes cut in quarters, a bag of frozen carrots, and a packet of ranch dressing mix. Cook on low for 8 hrs. (Note: Use boneless pork chops bc they are so tender they will fall off the bones and it's hard to get al the tiny bones out. I made that mistake the first time I made this.)
This week, I'm traveling Mon and Tues, so DH will graze and feed Mac and cheese and ravioli to DD. Wednesday is chili, Thursday is chili dogs with sweet potato fries, and Friday is something undecided involving chicken in the crockpot. Maybe pulled bbq chicken.
whole wheat pasta with garlic, collard greens, and turkey sausage aloo gobi (started with this recipe but added garlic, ginger, and unsweetened dried coconut) chorizo, butternut squash, and zucchini chili pot (took some liberties with this recipe, including using soy chorizo. wasn't as exciting as i'd hoped)
rest of week- TBD. might make tortellini soup with more collard greens. maybe turkey burgers and oven fries, but i need to get hamburger buns.

My work friends have found it hilarious for years that I meal-plan. Your "every man for himself" reminds me that pre-kids we used to plan one night per week to "Be Spontaneous!" My work friends laughed their collective butt off when they came to my house, saw the meal plan on the fridge, and saw the planned spontaneity. In writing. On my plan. I sort of understood why that was funny.

People think I'm weird for meal planning but then I explain to them that it is much easier to plan one meal that everyone eats versus trying to figure out dinner for 4 different people.

Tuesday-Spaghetti
Wednesday-Quiches, hash browns and fruit
Thursday-Baked fish, cole slaw and maybe mac and cheese (since DS will prob eat that)
Friday-Pizza

Here's the recipe for the chicken taco chili---super easy and it was super tasty. Definitely will be making again soon.
1 Onion, 16 oz can Black Beans, 16 oz can of Great Northern white beans, 8 oz tomato sauce, 1 packet of taco seasoning, 14 oz can of roasted diced tomatoes, 14 oz can of diced tomatoes with chilies, 10 oz bag of frozen corn, 3-4 boneless-skinless chicken breasts.
Combine all ingredients (minus chicken and corn) stir and then add in the chicken. Cover in the crock pot for 10 hours on low or 6 hours on high. 45 minutes before serving remove chicken and shred. Add the chicken back in immediately along with the bag of frozen corn. *At this point you can add in some shredded cheese if you want. I added about a cup of cheddar. Then serve with some fritos on top. Mmmmm!
