Can we have another menu thread? I have been googling all of nap time, and I've only come up with two things to make this week. Bonus points will be awarded if you can suggest anything that takes 15 minutes or less to throw together.
Coconut curry crockpot chicken is happening today. 1 can of coconut milk, a few tablespoons of tomato paste, your favorite Indian spices, and whatever chicken you have on hand, in the crock pot on low. I'll add some veggies at some point. That's how tired mamas make dinner happen!
Throw a pound of chicken breasts in the crock pot, shred them with two forks, throw a packet of enchiladas seasonings in, following the directions on the back. About 10 minutes before serving, tear up two large tortillas and mix in. Top with cheese. Eat when melted.
Grilled cheese is my favorite quickie dinner lately. I use mayo on the bread instead of butter now. I like to put lunch meat and tomatoes in mine, too. Or you can get really fancypants with them by putting high end cheese, figs, fruit spreads, fresh herbs, prosciutto, whatever strikes your fancy.
Beef short ribs are happening today. Loosely based on a Ina Garten recipe, although I don't follow a recipe anymore. Browned short ribs, softened onions and carrots, salt/pepper, a stick of rosemary, garlic, tomato paste, red wine, beef stock.

I used: Ginger, a pinch of coriander, a pinch of cinnamon, smoked paprika, cumin, salt, garlic/onion powder because I was too lazy to chop, and a lot of curry. There are different types of curry so don't go for spicy/madras curry. Smoked or sweet curries would be good. And, if you've never had Indian food before, get ready to live! I love Indian food because it is always the perfect blend of seasonings. I think I'll be adding diced bell peppers and cauliflower. Peas and cashews would be good too. You get a lot of wiggle room with Indian dishes.

I bought a butternut squash. So now I have to find something to do with it. Butternut squash soup? But I don't know how to make that. Instead of Bumping maybe I should look up a recipe. Or just see if someone has one here.
DH is making smoked haddock chowder tomorrow night. He did all the veggie prep today, so tomorrow night it should be a simple task of sautee/heat/serve.
@unaveragejane check out Butter Chicken for a tasty Indian recipe. It's yummy! Also, I don't find that curry lingers too much when fresh, but reheated curry hangs around for a while. My workplace is probably +- 50% Indian, so we get a lot of reheated curry smells in the office.
I think part of my hesitation to meal planning is: what if I get to Wednesday and no longer feel like eating enchiladas? Then the meat and other ingredients don't get used and potentially go bad if I can't think of another use.

Usually the only thing in my recipes that will go bad is the fresh veggies. Most of what I plan uses the same basic vegetables (onions, garlic, bell peppers, and sometimes mushrooms), so I can swap out one recipe for another if needed. I keep carrots and celery on hand pretty much all the time (although I admit that the celery usually goes bad before I get all of it used up). I thaw the meat the night before, so if needed I can usually wait one more day before using it.
I find that it stays fresh much longer if you cut it and put it in a cup of water. It will soak up the water (refresh it every few days) and stay crisp.

We are about 100 feet from a cheese shop, green grocer, butcher, and fishmonger. So I often just buy dinner earlier in the day.
I find that it stays fresh much longer if you cut it and put it in a cup of water. It will soak up the water (refresh it every few days) and stay crisp.
You can also refresh limp celery like this. It's like a magic trick.

When I meal plan (which I only do about half of the time) I just plan out five meals for the week and don't assign any special day for them other than trying to use the fresh meat and veggies earlier in the week. I try to make one or two of the meals something that's easy to freeze or make another time, like a rice and meat dish where I could freeze the meat or pizza where the dough lasts 3 days in the fridge or I can freeze it, and cheese and canned tomatoes last even longer. That way, if I get a craving for something, I can run out and grab the ingredients and keep one of the meals I planned for another time.
If you have access to celeriac, I far prefer it to celery. You can use it for any cooked celery application. It's the root ball of a different kind of celery plant and it lasts FOREVER. Like 6+ months in your crisper drawer. Even after you've cut off half to use in a dish. I've actually never seen one rot in my fridge. If your fridge is moist the root end of the ball can grow a little mold, but you have to cut off the skin anyway, so it really doesn't matter (and it doesn't progress into the ball or cause rot).
Oooooh. DH sometimes does celeriac purée. Sometimes it's thick like a mashed potato substitute, sometimes he will thin it with broth and spread it on a plate under grilled meat of the day.
