Nothing to do unless it happens frequently. Just chalk it up to "Pay it Forward" - maybe they were dying for a Diet Coke and yours made their day.
Someone ate 3 of my cheese sticks at work and I was all pissed until DH pointed out that it was probably starving grad students coding at midnight which made me feel bad for them.
Is this question for real? I would think a coworker was extremely petty if he or she was asking around about someone drinking their Diet Coke. It's something that costs maybe $1.50. And it very well could have been an accident as all Diet Coke's pretty much look the same. Yeah, it's annoying but not the end of the world.

I sent an email trying to recoup my salad dressing once. I regretted it.
It does suck but I'd let it go, but start marking your items. I let it go when someone ate my lunch (whole frozen entree I had marked) plus I was pregnant at that time.
I'm late, but we had a weird issue like this for a while. Someone was going through lunches and picking things out at random. I was pregnant, brought in leftovers of just about the ONLY thing that was appetizing to me, enough to last 2 meals. Someone ate it. Like, out of the takeout container. Which was disgusting to me.
Also when I was pregnant, I made a huge fruit salad. Pineapple, cantaloupe, honeydew, berries... someone ate all of the cantaloupe out of it. Just the cantaloupe. And all I could envision was someone over the bowl with their filthy fingers picking through the other fruit to get to the beloved cantaloupe. and I couldn't eat it.
It always happened during the day. So it was likely one of the EXTREMELY WELL COMPENSATED sales people that used to share the floor. People are so odd sometimes... and crazy cheap... cantaloupes cost like $2 in the summer... splurge and don't steal mine...

But to answer the OP if it was a one time thing do nothing. Apparently we had a repeat offender in our office and someone hung a sign on the fridge that said "Every time you steal a coke a polar bear dies" with a picture of the Coca Cola polar bears in the background. So you can do something like that if it continues. I thought it was pretty hilarious.
I think it could be an honest accident. I've been dumb enough to forget which soda I took to work once and did this to someone. Now I just keep things at my desk with an ice pack.
@mae0111 that is disgusting. It's one thing to take someone else's food by mistake (if it's in commercial packaging) because they might think they brought in their (coke-peanut butter jar-whatever of the like)
but to go over someone else's lunch which is cooked or prepared at home and clearly not yours, that's just wrong and disgusting at every aspect.
God if someone touched my food while I was pregnant I'd eat them
