I need to start eating better, and I want to take some salads to work this week. I can't eat peppers or cucumbers (horrible indigestion). I'm thinking lettuce, tomatoes, carrots, cheese, croutons, bacon crumbles and a hard boiled egg. Sound good or should I add some more?

Oh yeah! I love all that, plus I add avocado, cold potatoes, fresh corn cut off the cob, shredded carrots, cranberries, pecans, or leftovers - today I had some of the chicken taco meat I had leftover from dinner with some lowfat jack cheese and lime on mine. Yum.
Ooooo! I LOVE chickpeas! Also, if you use vinaigrette dressing, you could add dried cranberries---they're delish, and make a wonderful sweet contrast to the tart/sour flavor of the dressing.
