Beef always trips me up. Ground beef is my go-to for red meat, followed closely by stew meat and then pot roast. I just never really got comfortable with it.
I double the rosemary because I love that flavor. Sometimes I deglaze my pot with a little red wine before I add the meat back in too. It's really good.
We don't eat beef often because FI won't eat any except ground beef. He's gotten other forms stuck in his esophagus multiple times, so that's scared him away from it. This isn't an official recipe, since I don't actually use one, but this is how I make Beef Stroganoff, which DS LOVES:
Cut beef (Either a cheap or fancy cut of steak, whatever you feel like) into thin strips. Saute with a chopped onion until onion and beef are cooked through. Add some beef broth (one can and water, or we just use a few cups of water and a couple of beef bouillon cubes). Scrape up the yummy bits on the bottom and bring to a boil. Let it simmer for a few minutes and add a few big spoonfuls of sour cream. My mom uses nonfat sour cream, but we use full fat and it's SO MUCH BETTER. Don't tell my mom, though. Let it simmer and thicken a little bit. Serve over egg noodles with peas or broccoli.
I just threw this together in the crock pot this morning.
Beef Stew with Mushrooms
2 lbs stewing beef, cubed
1 can cream of mushroom soup
4 or 8 oz can of mushrooms
1 envelope dry onion soup mix
Salt and pepper
Half a soup can of water
Sprinkle bottom of greased slow cooker with one fourth of dry soup mix. Layer in meat, mushrooms, soup, and remaining dry onion soup mix. Pour water over. Cook on low 8 hours or high 4 hours. Serve over mashed potatoes, rice, or noodles.
DH doesn't like mushrooms so I actually don't include the can of mushrooms in the crock pot. I serve it with mashed potatoes and corn. It's easy and yummy.

1 Can tomato soup
1 can cream of mushroom soup
potatoes, cubes
small bag of baby carrots
You can cook it in a crockpot or in the oven. We just eat it out of a bowl like soup.
