Toddler lunch ideas

My 15 m/o goes to daycare that doesn't allow nuts or meats (for kosher reasons) brought in. I find it difficult to think of things to give her for lunch that don't include those items. I feel like I rotate giving her ravioli, grilled cheese, pasta with sauce, and pizza every single week. I need some fresh ideas. I give her lots of fruits, vegetables, and cheese for snacks. Any suggestions for lunch's main course that doesn't have nuts or meat in it? Thanks!

  • Beans, for sure. My son likes black beans and kidney beans.

    Hummus, as mentioned. Muffin frittatas (and you can get her veggies that way). Mac and cheese (I add things like broccoli, peas, or spinach.) Quesadillas. Yogurt.

    And don't feel bad. We only have the nuts prohibition, and my son still doesn't get much variety for lunch. We save that for dinner (and more than half the time he won't eat what we serve him!)

    my thoughts are hummus  (either with a spoon, as a dip, or on a sandwish)
    and tofu (you can do cubes in a tupperware, you can add a dip if your kid needs a little more zing than plain tofu)
    or spanikopita?  (I get it frozen at costco)

    We also do lentils or lentil/barley soup if your kid can maneuver a spoon enough for that

    and i agree with PP about exploring eggs more

    I'll be watching this thread for more ideas-- I feel like lunch eventually gets boring for all of us!

  • Yogurt?  We also give DD these spinach nuggets we found in the vegetarian area of the store.  Honestly, DD would be happy if she had he same rice and beans with avocado every day.
