leftovers to be eaten: pizza (made at home friday with storebought dough, tomato sauce, cheese) lentil soup sloppy joes (omitted peppers and subbed ground turkey)
monday- on sunday i made stuffed acorn squash- it is fully assembled and ready to go under the broiler for dinner tonight (used ground turkey with extra seasoning instead of sausage)
tuesday- i have veterans day off, so hopefully i'll be able to cook a few things for later in the week
wednesday- will make ma po tofu (already made brown rice on sunday).
thursday- pizza again (have another ball of store-bought dough). probably will do tex-mex style toppings- cheddar cheese, black beans, salsa, jalepenos
DH and I cooked a ton of stuff over the weekend, so we have options for leftovers all week.
We made chili (DH had some for lunch today, I will probably eat the rest for dinner tonight).
Veggie soup for lunches and dinners.
We roasted a chicken for dinner last night, and there is quite a bit left over - having some over a salad for lunch right now, and will likely make salads or quesadillas for dinner.
So no set plan, but lots of low effort options, which keeps us away from the takeout!
