hot easy to pack and reheat lunches

Hi ladies,

I'm at loss here, my husband and I eat the heaviest meal at work+snacks and eat a lighter last meal at home. We are both not fan of cold lunch ideas (sandwiches and salads) we need filling things that are easy to reheat in the microwave. One problem I face is that most of our cuisine (Middle Eastern) is based on stews, which I haven't been able to do in quiet a while because of the excess sauces running everywhere.

If you have any recipe that is office appropriate (not too spicy or smelly/not too watery) yet would still suffice for people with big appetites and are hot meals I'd appreciate it.

I normally cook enough for us for 2 days and alternate new meals and leftovers throughout the week

  • I use my leftovers and make rice bowls (like Chipotle style but with whatever meat and veggies I have).

    Rice and beans

    Sweet potato and black bean burritos

    Quinoa and veggies.

    Skinnytaste.com has a nice selection of lunch ideas. I also detest cold sandwiches and salads get old.

  • I would try lasagnas, casseroles, stroganoffs, moussaka, that sort of thing.
  • All of the above, plus I make burritos and freeze them.  Wrap in waxed paper before freezing.  Microwave in waxed paper.  I make a bunch and keep them on hand in case I don't have leftovers.

  • Buy a nice thermos to put your stew in. The good ones are leak proof and easy to clean. You might need a separate bowl to rewarm.

  • If you're concerned about leaking, have you tried the glasslock type containers? I've never had a leak with those.

    I take hearty soups (like ham/bean, chili), pastas, casseroles, curries with rice, etc. I much prefer hot foods, as well.

  • leaking wise, it's more the heating and eating (my husband is the clumsy type) and he just got promoted to be a new department manager, he doesn't want sauce over his desk or clothes, or over the stuff as he heat. It's more that than the transferring from home to work.

    I do make lasagnas and chicken Parmesan casseroles a lot I think I will look up more casseroles and see what recipes I will get. I appreciate it if any of you have a good casserole recipe to share.

    As to crock pots I don't know why am not warming up to them, I think it's because I have to do a lot of prep work in advance and the worry that something might happen while I'm at work and a fire might start at my home (paranoid)

  • I'm glad other people take hot meals to eat at their office too, I felt like such a carnival when I looked at what other people take to work (salads/boiled egg/cold pasta) that would not fly in our house! big meaty eaters over here

  • I put rice or quinoa under my curry and stews to help soak up some of the sauce so it isn't so saucy. Otherwise my heat and eat meals include: pasta dishes like lasagna, stir fry veggies over noodles or rice, steamed veggies w/ meat (chicken thighs, pot roast, pork chops, etc) over rice or whole grains, and Jambalaya.
