  • Mine is this spicy beef vegetable soup. It is super easy to throw together, but in my experience it is more like soup and not as thick as a stew.

    I love potato cheese with leeks soup. It's a box of chicken stock (4 cups) one cup of water and about 6 regular sized potatoes chopped into bite size chunks. Saute the leeks in a couple table spoons of butter. Once the potatoes are done you toss in the leeks. Then you put two cups out of the pot and into the blender. Give that a quick blend. That thickens the soup. Then 2 cups of cheddar cheese and simmer that for about 20 minutes then at the end you mix in 1/2 cup sour cream. So...good...it's my grandpa's recipe. he was a chef. Obviously we don't like healthy food around here but you could easily substitute for healthier versions.

  • This is a crock pot recipe and I've made it twice in the last week or so.

    Mix the following in a crock pot:

    2 cups cooked chicken
    1 can cream of mushroom
    1 can cream of chicken
    2 soup cans of water
    4 teaspoons flour
    1/2 teaspoon of pepper
    2 teaspoons chicken boulion granules (I've used cubes)

    After this is mixed, take 8 uncooked and quartered biscuits and slowly stir in to the rest (as it cooks they rise ton the top).

    I also mix in frozen corn and do 2 cans of cream of chicken soup and skip the cream of mushroom because DH doesn't care for it.

    Cook on low for 4-6 hours. I've watched for the biscuits to brown nicely and called it a day. This is a meal my H has actually been requesting for a while. It's more of a stew but.

  • Chicken avacado soup! So good! You can add in a scoop of rice or some rice noodles if you want a starch, but the avacado makes it really filling. You can also use shredded rotisserie or left over baked chicken to make it quicker.

  • Split pea, I will cook a hamsteak and cut up the leftovers to put in the soup too!

    I also love Maryland Crab soup in winter, we do it every year for Christmas Eve!
