We are having left over chicken tikka masala, and I am making minestrone soup tonight that will hopefully last a couple for days. My husband might make his deer chile later this week. Lots of soups! @irishcurls, I am totally cheating on your butter chicken recipe. I will make the real thing one day because it sounds so good, but while I was looking for the curry type ingredients on the international aisle yesterday, I found a bottle of butter chicken sauce. Hopefully it will be as good as the real things.
We made crockpot stew (beef, potatoes, celery, onions, carrots) last night, so leftovers tonight.
Later this week: whole wheat spaghetti with lean ground beef and steamed broccoli on the side, crockpot salsa chicken with black beans and quinoa on the side, fish and big salad.

Wednesday we're going out for dinner for our four year anniversary. And for the most part, we just pick out meals and then decide that day what to have. So the meals I can prepare right now are:
Pulled pork/pulled chicken (prepackaged was on sale so two meals here) sandwiches
M- ground bison with my homemade spat sauce and penne with lots of mushrooms and veggies. I hate pasta but it's cheap so I'm trying to eat it more. T- sweet and smoky pulled pork Sammy's in the crock pot W- pita pizza T- garlic red snapper with spag squash and brocolli F-steak and roasted potato and baked Brussels sprouts S- salmon, vermicelli and beets Sun: whole chicken in dutch oven with blackbean quinoa salad
This week we are trying to eat all the crap in our pantry that has been sitting there for months. I always buy stuff like rice avd beans on sale and we never eat!
Ohhh @mahalo3 I was all "go girl with your butter chicken!" But seriously, some of those sauces are so good, haha we cheat all the time! Let me know how it is!
Monday: Guiness Lamb stew and crusty bread I made last night. It was a Cooking Light that I tried for the first time, very satisfying! Especially since it snowed yesterday!
I made a baked tortellini dish last night. And we are having egg fried rice tonight. We will switch between them for the rest of the week (the egg fried rice will be prepared fresh each time).
M: Veggie meatloaf (about 3/4 meat, 1/4 veggies) with mashed bacon chive potatoes T: Braised chicken thighs W: Leftover meatloaf Th: Breakfast for dinner! F: No idea...hopefully we go out somewhere and get enough that we have leftovers for the weekend!
