Tonight: crockpot chicken tacos with black beans Tomorrow/Monday: grilled flank steak with roasted potatoes and spinach Tuesday/Wednesday: pork chops with mushrooms & onions rice and mixed veggies Thursday/Friday: chicken and peas with angel hair in Alfredo sauce
I only need to really cook monday and Tuesday this week. Monday is DH's birthday, so I am making red wine braised short rib over homemade ricotta gnocchi. Maybe turkey taco Tuesday? I think the rest of the week will involve a lot of chicken, squash and kale since I bought a big bushel of squash last weekend.

I like to keep things simple, but different. Most things are cooked in the crockpot since I'm in school all day and don't want to spend my evenings cooking.
Monday: blackened chicken w cilantro time quinoa Tuesday: herb rubbed pork chop brown rice & veg Wednesday: cheesy creamy chicken brocolli quinoa casserole Thursday: roasted pork loin & mushroom quinoa & veg Friday: one pot pasta Saturday: left overs most likely.
