Freezer meals

So I'm pretty sure that I asked this exact same question a few months ago, but I'm way too lazy to go back and find that thread.....

What are your favorite tried and true freezer meals? I need to start planning/making mine because it's almost Nov, which means that I'll be busy with the holidays and forget to do them if I don't now!

So far, I'm planning:
Soups. Lots o' soup.
Sweet and sour chicken
Coconut crusted chicken
Mac & cheese casserole
Lasagna
Pot pies
Breakfast burritos

  • I actually have never made freezer meals, but plan to start soon. We were supposed to pick up our freezer a few weeks ago, but family stuff got in the way, so we are picking it up on Saturday.

    Hopefully I'll start in the next 2 weeks or so, but I'm planning on doing:

    Lasagna
    Gumbo
    Pot pie (with left over Turkey after thanksgiving)
    Turkey Soup (again waiting on this)
    Casseroles
    Chili
    Spaghetti sauce (will do noodles on day we eat it.)

    I'm also going to make up a few extra pies at thanksgiving and Christmas and freeze those for desserts on occasion.

    I'd look into the pioneer woman recipes, she makes lots of freezer meals.

    I'm planning to start mine within the next week or two, but I'm also due at the end of Dec. I'll probably make a few weekly until Christmas.
  • My nephew and I already made chicken parm, pork parm, meatballs and sausages, and baked ziti (as well as three containers of red sauce) and froze them - we did it a couple of weekends ago (he did most of the work, I just bought the stuff and made the ziti).

    Before the baby comes, I'll probably do a chicken soup and a veggie soup and freeze those in varying size containers.

    My husband will also make a double batch of chili to freeze.

    In addition to that, I will make sure that I have the makings for a variety of easy crockpot meals - a couple of roaster chickens, a bunch of stew beef, a pork shoulder (for pulled pork or carnitas), and probably some chicken thighs and breasts for cacciatore.

  • I'm so jealous of your freezer meals! I have one of those older fridges with the freezer on top, so it's a really small freezer that can't accommodate a bunch of freezer meals.

  • The Pioneer Woman has a really good spaghetti meat sauce recipe that I make a lot and freeze. I, personally, don't eat meat, but I make it for my husband. I get probably 5 freezer quart bags out of one batch, which covers him for a meal and leftovers. I plan on making at least a couple batches of it before baby arrives. 

    We love pasta in any form, though, so I'm also planning to do some freezer baked ravioli and lasagna roll ups. I can't locate it at the moment, but I've done a chicken enchilada freezer meal, as well, that my husband loves. I'll probably do some chili, too, and I might try freezing muffins, but I've never done that before. 

    I always have frozen chicken breasts on hand, too. Cook them in that Saute Express flavored butter and it's super easy and good (according to my hubs). 

    We have a chest freezer in our garage, and I want to stock it up!

    After this post, I posted on my neighborhood FB page. Someone is willing to deliver and set up one of those deep chest freezers in our garage, for $150. Does that sound like a decent deal? I was hoping to spend like $100.

    I'd look around in your area and see how much they run for.
    I personally would stay clear from chest freezers, they can be a bitch when you've got stuff in there... You've gotta dig around, hurts your back ect. ... But it's totally a preference thing.

    I'm buying a stand up freezer, for $150 from a family member. It is only 4 years old. .. And hardly used. Good Size ect. Originally it was over $750.

  • @LaBellaVida‌ I looked around on CL and didn't see anything I'm interested in. Also, delivery and set up is a must for us since obviously I can't lift anything, and my hubby is still technically in recovery from back surgery and can't lift either.

    I talked them down to $125 and pulled the trigger, since they're defrosting and cleaning it for us, and then they will deliver and set it up.

    I'm excited to be able to make freezer meals now! I gotta start making a list.

    nice. I mean, it'll serve it's purpose, and it sounds like a good price, so even if you end up not liking it you can probably sell it and get close to what you paid for it.

    Like I said, it comes down to preference.

    I Google lactation cookies and found allot of recipes. From what I've seen they are all pretty similar. Most important ingredients are oats, flax seed, and brewer's yeast. It MUST be brewer's yeast, and it can kinda be hard to find. I went to the store and was told 'nutritional yeast' was the exact same as brewer's yeast, and come to find out its not! Ugh, and my cookies tasted gross.
    I eventually got brewers yeast and they were much better.
    I even added a little more to my cookies then the recipe called for.

    You can also add those few ingredients to muffins and get lactation muffins.

    Also to smoothies and get lactation smoothies. :)
