SO: freezer meals-BAKERS ENTER

Every Christmas the boys and I spend a day or two making cookies to make cookie plates to hand out to the homeless.

This year, being nearly 9 months pregnant I bet I won't have the energy to bake for a few days at a time esp. With the holiday cooking I'll be doing.

Can I make cookie dough, and just freeze it, or will it ruin the cookies when ready to bake? Do I need to add anything, or omit anything before freezing?

What's the best way to freeze cookie dough? Ideally I'd like to make them into individual servings so that way I just break apart and bake.

I'd like to make up a few batches of lactation cookies for myself after baby arrives.

  • Yup, exactly what @Trek3‌ said. It's super easy to freeze the dough in individual cookie-sized balls, and then you can just bake as many as you want at a time. If you bake before freezing, just make sure that you seal them up well, and they should be fine. Don't frost them before freezing, and make sure that they're completely thawed to room-temp before decorating.
    I'm planning to start Christmas cookies just after Thanksgiving, and freeze them. Hopefully they last until Christmas!
  • Would I still bake them as per the recipe, let's say 350 degrees for 10 min, or would I increase heat, or length of time?

    What are spritz, and rugulach cookies?

    I usually just make big batches of pb, chocolate chip, oatmeal, and sugar or snicker doodles.

    Oh! And pb blossoms. Those are my favorite!

  • This reminded me that I have a frozen bag of vegan cookie dough from one of my dear friends. So as soon as I get home it's coming out of the freezer and I'm digging in.

  • You can freeze pies too! Fruit pies, not cream pies. I'm the holiday pie baker for my family and I'm planning making up all of my pies this weekend to freeze, and then all I have to do is take them out the night before and bake the day of. I hadn't thought about cookies, but maybe I'll make up a few batches of dough too :)

  • Regarding cooking time, if you are cooking dozens of frozen cookies, I would let them thaw at room temp.  If your tray of cookies normally turns out with some near the edges more cooked than the ones in the center, it will be even worse if you increase the time to cook from frozen.

    Also, my single sisters prefer getting their homemade cookies as frozen dough (in cookie size balls).  You can cook them one or two at a time (toast oven works, too) and then have them all hot & fresh - plus no girl needs to eat 2 dozen cookies in a week.

  • I made 86 cookies tonight (well most of it is frozen dough) but decided to cook up a batch for the kids and the husband.

    Idk wtf happened, but the cookies I baked turned out flat, and ugly! I'm pissed. I've never messed up cookies before and now I have all these frozen balls in my freezer that will more then likely turn out like crap too! ~X(

    Yeah they taste good! Just too thin.

    If they were too thin it could be too much butter or dough too warm. I would try baking six tomorrow from frozen - they could actually turn out better.

    Good idea....i think I'll try that and see how they turn out.

  • It sounds like chilling the dough could help, or you could add a little flour (I know that may be difficult with the frozen dough).
