I have a convection oven. I understand it speeds cooking. I know nothing further, beyond the fact that recipes don't generally say "for convection bake at XYZ for XYZ time" so that has pretty much ruled out the convection setting for me. I used to have a countertop convection oven and loved it, but it's like a giant eraser has eliminated all knowledge regarding how that all worked. Anyone have tips?
