Meal Plan Monday

Hope I'm not stepping on your toes @lbonga1.  Haven't seen this post yet today and I think there is a good group that enjoys this post!

So what are the plans for this week?  Any great recipes from last week that the rest of us need to try?

Mon - Sloppy Joe, Potatoes
Tues - Kielbasa, Pepper, Onion, and Potato Hash
Weds - Veggie Fajita Linguine
Thurs - Burgers and Fries
Fri - Cheese Enchiladas and rice
Sat - Eat Out
Sun - Baked Ziti

Last week I tried a new recipe (Baked Tortellini) https://www.pipandebby.com/pip-ebby/2014/7/29/easy-cheesy-tortellini-bake.html.  I don't think it was my favorite dish, but it was good enough to add to the rotation and make sometime again.  Another dish I made is a long time favorite and I recommend it to any of you looking for a good tex mex.  https://www.marthastewart.com/870095/budin-azteca.  Instead of chicken I substitute black beans and corn.

Sun - Red lentil curry and basmati rice (eating leftovers for lunch as I type this - yum!)
Mon - tortellini with an artichoke and tomato sauce
    Tue - vegetarian lentil-quinoa tacos
Wed - breakfast for dinner at my parents' house
    Thu - macaroni and cheese
    Fri - crockpot enchilada pasta
Sat - winging it. If DH goes to the framers market with DD while I'm working, maybe he will make something yummy. Otherwise, might go out to dinner.

Last week my roasted veggies and pasta can out particularly well. And DD loved the white bean and fennel soup. I stuck it in the blender for a couple seconds for her since some of the chunks of stuff were pretty big, then I tossed some ditalini pasta in there, and she had two big helpings of it.

Oh! And we learned from Indian takeout night that we can now add potato pakoras to the very short list of ways DD will eat potatoes. Until then it was literally just French fries. I got her to try the pakora by saying it was kind of like a French fry, so every time she took a bite, she'd shout "like French fries!" She also felt the need to inform us every time she ate a pea from her mattar paneer.

  • Sunday: grilled cheese sandwiches and tomato soup
Monday: fish fillets, mac and cheese, peaches
    Tuesday: dinner at my mom's
Wednesday: baked chicken and rice, asparagus
    Thursday: leftovers
Friday: pizza pasta casserole, fruit salad

My DD doesn't like most potatoes either, unless they're mashed or sometimes in french-fry form. I have a roasted veggie dish that DH and I love (red potatoes, onions, and peppers) and I'm so bummed because she won't eat onions or peppers at all, and will only sporadically eat a couple potato chunks. I just keep offering in hopes that someday she will try them and like them.

Thanks for getting it started @khaze! I had a busy morning. We did pretty good about sticking to our meal plan last week. Though we did have one late night that we opted for fast food for FI and frozen pizza for me. Here's what I've got planned for this week:

    Mon- Rotisserie chicken and asparagus

    Tue-  Leftovers

    Wed- Hoisin ginger chicken legs

Thu- Chicken & homemade gnocchi soup

    Fri- Ham & potato frittata

    Sat- Breakfast sandwiches

    Sun- Teriyaki chicken bowls

ETA: Here's the recipe for the gnocchi that I'm going to make: https://www.budgetbytes.com/2011/08/easy-ricotta-gnocchi/. And I'm using a copycat Olive Garden chicken & gnocchi soup recipe. Probably not the healthiest, but oh well.

I just blacken them a little bit on my skillet to be honest.  I also make up a huge batch of them at a time and freeze them in pre-portioned ziplock bags.  No open flames here!  Who has the time?  It's a Martha Stewart recipe of course :)

DD isn't allergic to anything that I know of...it's my FI that makes it hard. He has oral allergy syndrome, so there's a lot of fruits and veggies that cause irritation in his mouth and throat. I made turkey bolognese last week, but I had to make a completely different pasta sauce for him because the tomatoes made his throat itch. I try to keep some stuff in the freezer that I can quickly heat up if that happens.
