This is a VERY easy bread pudding recipe for when I'm craving it and need it now:
2 eggs at room temperature
2 1/4 cups whole milk - I've definitely used skim
1/2 cup sugar
1 1/2 tsp cinnamon
5 cups cubed or torn white bread - or use your french bread loaf
1 1/2 cups chocolate chips - I've found that mini chips melt better, and I definitely am pretty generous with my chip measuring:)
Mix eggs, milk, sugar, and cinnamon. Add bread, stir until covered. Fold in chips. Pour into an 8x8 pan and bake at 350 for about 45 mins or until a knife comes out clean.
