DH and I started a pre-holiday diet/workout pact. We're jumpstarting our diets this week with salads, salads, and more salads. I have 10lbs/1 full size to lose, DH has about 25-30lbs to lose.
I prepped several days worth of salad "supplies" yesterday - chopped romaine (also have baby lettuce and arugula), carrots, cucumbers, peppers, celery, mushrooms. Grilled some chicken. have fresh tomatoes ready to go. Will also add different types of beans/chickpeas to the mix. I will do more prep mid-week when we run out.
over the weekend i cooked the following: spaghetti squash with roasted tomatoes, chickpeas, and onions, with ricotta cheese (recipe) chicken tinga (used this recipe as a start, but made some changes) pinto beans (frijoles a la charra, except i cheated and used canned beans) lentil soup (similar recipe) baked sweet potatoes
so we have leftovers of all of the above. i made up some portions of the chicken over the baked sweet potatoes with cheese on top. we'll have the lentil soup and leftover spaghetti squash for lunch. this should get us through the next couple of days, anyway. maybe i'll make rice to have with the leftover beans later in the week. then i'll be restocking at the farmer's market and grocery store.
I have given up fried food completely for the next 30 days. Since we don't do fried food for dinner, you can just consider that a whine. I realized this weekend how much fried food I eat for lunch and am appalled at myself. So dinners this week are:
Monday: turkey chili
Tuesday: I'm out of town so trying not to feed my fried food addiction
Wednesday: chili turkey dogs
Thursday: some sort of pork chops in the slow cooker
Friday: cheese quesadillas and red pepper and tomato soup

I didn't write a list and blanked at the grocery store, forgetting a few ingredients. So if I swing by the store at some point:
