@redneckmomma25 I applaud you on having a dinner menu for all week! I need to start doing this. My DH and I text each other before we leave work and I (or him) pick up some stuff to whip up when we get home. It's exhausting making a trip to the store every day, bc we have nothing in the fridge! I'm stealing your meal ideas, love it!

I'm 20 minutes from a grocery store and I hate shopping with dd. So I go once for the week and I'm done. I'm 30 minutes from cheaper groceries/target/mall. I usually try and do that. I just can't go to the grocery store everyday. DH drives home for 2 hours I ask him to do very little in that respect since I'm home during the day. I used to be able to daily or every other day trips. Not any more.

Plan ahead you'll save money and stress.
Yes! We need to change our habits now, bc I know this won't fly when LO gets here... Thanks for the tips!.

I'm finally feeling like I can get back on my meal planning game.
We had garlic and roasted red pepper meatloaf with smashed red potatoes last night. I also have ingredients for parmesan risotto with feta chicken sausage, and got some of our favorite frozen organic tamales. I've still got some weird food aversions, so three days of meals seemed like a good place to start.
Yum! This is inspiring to me. I am embarrassed to say that I think we have only had one home cooked meal in the past 2 weeks . I planned meals last weekend but never made it to the store.
Definitely going to make one of the enchilada/burrito bakes tonight to change the trend-- yum, beans and cheese!
For the rest of the week: Lemongrass chicken Vegetable curry with chick peas Split pea soup Chicken couscous pot with spicy mango sauce
Sorry, I don't have links bc they are from cookbooks! Wish me luck.
@snowbigdeal We love roasted root veggies. Cut everything into chunks and toss with evoo and kosher salt. Bake at 400 for about an hour. You can also add herbs if you like. I usually do some rosemary, sage and thyme. My husband likes adding smoked paprika. Kind of like bbq roasted veggies. I don't have a meal plan yet even though I should. I did just make lemon cupcakes which are cooling before I frost them because I deserve decadence.
ETA: cupcakes were insane but the frosting was too runny.
Doing this weeks breakfast prep because I never have time in the AM to eat well .. Yummy egg muffins - like a mini omelette! So tasty .. Next are coconut flour blueberry muffins! Quick easy and ready for the week but everyone's dinner sounds amazing - that's all on DH!
Tonight is miso and fried tofu. Making daktoritang (korean hot wing stew) tomorrow. Also have chicken enchiladas on the list and I'm really craving steak & potatoes, so maybe will do that or stew. My suggestive mind wants all the food on everyone else's lists, tho ...
Tonight: green curry shrimps with rice and broccoli Monday: Bacon Cheddar Quiche with salad Tuesday: Roasted Pork Loin with Roots Vegetables Wednesday: leftovers Thursday: Italian Sausage and peppers Friday: out
Tonight- Pot roast with carrots and potatoes Monday- Baked fish and broccoli Tuesday - Grilled chicken salads with sweet potato fries Wednesday - Butternut squash soup and grilled cheese Thursday - Leftovers Friday - Out!
I used to meal plan and that has gone out the window b/c of morning sickness. But we don't eat out or order in too much, so I've been getting food on the table by changing the way I cook, like making larger quantities if things so they stretch a few meals.
I also make a big pot of soup or chili on the weekend and freeze a good amount so that I end up having a pretty good selection in the freezer that goes in the rotation.
My grocery store had pretty good fresh ravioli that I stick in the freezer and is a quick meal- sauté some garlic, dump a can of quality diced tomatoes and a splash of red wine and maybe some light seasoning - great with cheese ravioli - or mushroom raviolies in brown butter sauce with roasted pine nuts. So easy.
I often get a roasted chicken from the store and then all I make is a couple sides - couscous, rice or potatoes - and a simple steamed fresh veg.
Years ago I picked up a book called "how to cook without a book" and it dramatically changed the way I cook - it teaches you how to stock a pantry really well so that you can do more off the cuff cooking and then a good selection of things to make with lots of variations so that you can pretty much use what you have on hand. I highly recommend it.

@xucachi I'm going to have to look for that book, sounds interesting!
Normally we meal plan for one week and buy double, so we eat the same meals 2 weeks in a row but if you change up the days it isn't too bad. This also means I only have to shop every other week which is great because I hate grocery shopping. I haven't found any issues with fresh stuff going bad in that time frame.
That begin said, I'm traveling to Wisconson for work this week so who knows what I'll be eating... I mean, besides beer cheese soup.

I plan 2 weeks at a time (because I hate grocery shopping) so this may change depending on my mood/what I remember to take out of the freezer.
Tonight: Stuffed burgers and fries
Monday: Pasta with sausage, pumpkin and tomato sauce
Tuesday: Sweet potato and Brussels sprout skillet
Wednesday: Quinoa chili
Thursday: Leftovers
Friday: Undecided but a soup or stew

=P~ brussels sprouts. Roasted is excellent, if they're not overdone!
I found it on Pinterest, haven't tried it yet, so hopefully it's good. Here's the link for the recipe.
