Meal Planning Sunday

Ok. What is everyone planning this week? I'd post mine...except I'm still in the process of making it and looking for inspiration (see, I had tricky motives). 

I know one night I'm doing chicken and cheese egg rolls with spanish rice and peas, another night I'm doing slow cooker Italian Pork roast with green beans and baked potatoes. 


PS - the Italian pork roast is one of my favorite meals. It is SO easy and SO hands off and is SO delicious (and has lots of leftovers).

    Those egg rolls look yummy! The pork roast link doesn't work for me though :-/

    Tonight we're grilling hot Italian sausages and having baked beans and potato salad for sides. 
    Then:
    Creamy carrot soup
    Baked chimichangas (using chicken cooked in the slow cooker with a jar of salsa)
    BLTA's
    Steak Caesar salad
    Chicken Chesapeake (baked chicken breast with homemade crab dip on top, maybe in a wrap?)

    I alter everything a bit but here are some of the links:

    The chimichangas were from a magazine. Maybe I can find a link to something similar. We make them constantly.


    ETA: this is similar to the chimichangas we make. We add roasted poblanos and use refried beans in the tortilla instead of cheese. Serve with avocado, sour cream and hot sauce. Note: This link also makes a huge amount of food! We only use 2 cups of chicken and even then we freeze half of the final mixture since it's just the two of us right now. I would maybe make a third of this recipe for a family size meal(3-4 servings?).

  • This is going to be mostly a freezer/leftover week... Tonight was leftover potato soup topped with bacon and cheese. Tomorrow is my aunt's memorial service, so DH is staying with DD and will probably reheat leftover pizza. Wednesday is stuffed peppers in the crock pot. Thursday is pulled pork in the crock pot with broccoli, and Friday is pasta carbonara.

  • I'm just counting down to two weeks from now when we'll be living in my parents' basement for 6-8 weeks and someone will have dinner on the table for me when I get home, and even better, the dinner maker will be my celiac mom who is a caterer. I've never been so excited about the prospect of living in my parents' basement.

  • All I can say is you ladies inspire me. I seriously need some meal planning in my life! Right now all I have for the week is spaghetti :( If I find anything worth sharing I'll come back and post it.

    Also a question, do you only plan dinner? What about lunch, is that just winging it? Lunch gets me all the time bc I work from home and I'll look up and it's lunchtime and I'm starving and there's nothing to eat, I don't want to eat our dinner food.

  • @rm2013‌ , I don't plan lunch, other than dinner leftovers. It works for us because DH refuses to pack and just doesn't eat usually (he's a teacher with a weird schedule) and DD gets her meals at daycare so I only have to worry about myself.
