    They look so good!
  • @redneckmomma25‌ I applaud you on having a dinner menu for all week! I need to start doing this. My DH and I text each other before we leave work and I (or him) pick up some stuff to whip up when we get home. It's exhausting making a trip to the store every day, bc we have nothing in the fridge! I'm stealing your meal ideas, love it!

I'm 20 minutes from a grocery store and I hate shopping with dd. So I go once for the week and I'm done. I'm 30 minutes from cheaper groceries/target/mall. I usually try and do that. I just can't go to the grocery store everyday. DH drives home for 2 hours I ask him to do very little in that respect since I'm home during the day. I used to be able to daily or every other day trips. Not any more.

  • I'm finally feeling like I can get back on my meal planning game.

We had garlic and roasted red pepper meatloaf with smashed red potatoes last night. I also have ingredients for parmesan risotto with feta chicken sausage, and got some of our favorite frozen organic tamales. I've still got some weird food aversions, so three days of meals seemed like a good place to start.
  • Tonight: bacon wrapped chicken skewers w/ mango salsa
    Monday: Jambalya
Tuesday: Sage and sausage stuffed apples
    Wednesday: Out
Thursday: Sweet pulled pork on waffle sliders
Friday: sundried tomato grilled chicken with sweet potatoes

  • Yum! This is inspiring to me. I am embarrassed to say that I think we have only had one home cooked meal in the past 2 weeks :(. I planned meals last weekend but never made it to the store.

Definitely going to make one of the enchilada/burrito bakes tonight to change the trend-- yum, beans and cheese!

For the rest of the week:
    Lemongrass chicken
    Vegetable curry with chick peas
    Split pea soup
Chicken couscous pot with spicy mango sauce

Sorry, I don't have links bc they are from cookbooks! Wish me luck.

I used to meal plan and that has gone out the window b/c of morning sickness. But we don't eat out or order in too much, so I've been getting food on the table by changing the way I cook, like making larger quantities if things so they stretch a few meals.

I also make a big pot of soup or chili on the weekend and freeze a good amount so that I end up having a pretty good selection in the freezer that goes in the rotation.

My grocery store had pretty good fresh ravioli that I stick in the freezer and is a quick meal- sauté some garlic, dump a can of quality diced tomatoes and a splash of red wine and maybe some light seasoning - great with cheese ravioli - or mushroom raviolies in brown butter sauce with roasted pine nuts. So easy.

I often get a roasted chicken from the store and then all I make is a couple sides - couscous, rice or potatoes - and a simple steamed fresh veg.

Years ago I picked up a book called "how to cook without a book" and it dramatically changed the way I cook - it teaches you how to stock a pantry really well so that you can do more off the cuff cooking and then a good selection of things to make with lots of variations so that you can pretty much use what you have on hand. I highly recommend it.

  • @xucachi I'm going to have to look for that book, sounds interesting!

Normally we meal plan for one week and buy double, so we eat the same meals 2 weeks in a row but if you change up the days it isn't too bad. This also means I only have to shop every other week which is great because I hate grocery shopping. I haven't found any issues with fresh stuff going bad in that time frame.

That begin said, I'm traveling to Wisconson for work this week so who knows what I'll be eating... I mean, besides beer cheese soup.

  • I also need brussel sprouts somewhere in here and rice pudding.

=P~ brussels sprouts. Roasted is excellent, if they're not overdone!

I found it on Pinterest, haven't tried it yet, so hopefully it's good. Here's the link for the recipe.
