My mom claims I will need a lot. She got me a bunch at garage sales to go under the crib sheets I buy as she said that two is better. Apparently I was a very messy baby and always soiled mine. I think I have 5 or 6
I have 2 mattress covers/protectors. If she has an accident, the soiled (I hate that word) mattress protector and sheet go in the wash and I have a spare to throw on her mattress in the meantime. I feel like crib sheets are like normal sheets. It doesn't matter how many you have, as long as you have more than 1 for accidents.
I have a ton of sheets because I thought I would need them.... like @AF9211 said, as long as you have a back up sheet and matress pad for when the dirty stuff is in the wash you're good to go. I just have the typical BRU brand sheets too -nothing special. Just make sure they fit the mattress snugly.
One of the best pieces of advice i received early on was to double layer your crib. So mattress then waterproof cover/sheet/waterproof cover/sheet. That way in the middle of the night when baby pees out the diaper or spits up, all you have to do it rip off the top 2 layers and you have fresh linens readily available.
As far as how many? I have 2 waterproof mattress covers and 4 or 5 sheets. I do laundry constantly though (1-2 loads a day bc I have 3 kiddos) and so I do find some of the sheets collect dust.
I registered for whatever the suggested amount was on the BRU website. I think its like 5 sheets, 3 mattress pads, and 2 sheet savers.

Exactly this! In fact, I just tossed a soaking wet sheet and mattress protector into the wash
But, we did not use the mattress protector until Ella was about a year old, FYI. We felt it was a bit too "cushy" for our comfort when she was little.

Marnie was a really spitty baby; I'd just put a folded receiving blanket under where her head went, and change it daily. Kept the spits off the sheet, and I was doing loads of receiving blankets anyway, since she spit up EVERYWHERE.
I also use my crib as a changing table, so I'd put down another receiving blanket where I was changing the baby.

We used a sheet saver for a little while (couple days or weeks, don't remember) until our pediatrician said that they weren't safe because the baby could suffocate or something. I never really saw how DS could do that but went with her recommendation.
I agree with PP that have said layer sheets and mattress protectors. Definitely a few of each. I have always layered all sheets and mattress protectors and then when I'm down to just two on the bed, start washing. I think I started with something like 4 or 5 sheets. The protectors were the thin waterproof sheets that went between sheets and then a mattress pad right on top of the mattress. That way they mattress isn't too soft, either.

Yes, without the waterproof cover pee would probably soak through a lot more and dribble. Plus, I know with a singleton I wouldn't have had time to wipe down the mattress every time there was an accident or spit up seeped through - can't imagine wanting to worry about that w twins!

I love the sheets from Pottery Barn Kids, the quality is so much better than BabiesRUs. As far as how many I bought 3 as a FTM, but as a third time mom hahah I would just buy 2, personally.

1 base sheet (It goes under the mattress and is the piece you zip the top sheet onto)
3 top sheets (the part you zip onto the base sheet - this is the part you wash mostly)
We have the naturepedic mattress - it has an infant side (firm) and a toddler size (a little softer). It's 100% water proof too, so if both water proof pads happen to be soiled, no biggie.
So, if you have the quick zip sheets, how does they work with a mattress pad? The sheet is on too, and then if they wet through the sheet they'd also wet the pad and you'd have to strip that off anyway?

I LOVED our ultimate crib sheets. DS wasn't a very messy baby, but the few times we did have middle of the night blow outs it was a life saver only having to undo a couple of snaps instead of change the whole crib.

Ohhhhhhhhhh this never occurred to me. I was all in the waterproof mattress camp. Makes sense!!
We have never had a poopsplision in the crib, but have had vomit covered sheets a few times. I always lined his crib with two layers, so I could strip one sheet and mattress cover in the MOTN in case of emergency change.

We used one waterproof mattress pad, one sheet and the "ultimate crib sheet" at a time. DS spit up a LOT, and did pee through his diaper/pjs/sleepsack sometimes (usually when it was time to move up a size or switch to overnight diapers). So the Ultimate crib sheet was very useful so I didn't have to change the sheet in the middle of the night. My friend recommended doing two layers of mattress pad/sheet sets, and I agree that multiple waterproof layers are very useful.
I have a lot of extra crib sheets, like 5-6 (?) so I don't necessarily have to wash them after every mess. The Gerber ones are cheap, in price and quality. Some shrank in the wash and cannot fit back on the mattress. So I really recommend you avoid them. I like the Kidsline jersey knit cotton sheets. They stretch around the mattress easier, still are snug, and nice and soft.
I have two mattress protectors and three sheets. I think I have some of those sheet savers somewhere, but I never used them. I actually only use two of the three sheets. My advice? Get two mattress protectors and sheets, and then buy more later if you feel like you need extras. Skip the sheet savers until you know whether your little one tends to spit up.

For DS we have 3 sheets and 2 waterproof mattress covers. It has always been enough.
We also have to changing pad covers and waterproof covers for them. Those covers, when he was little, was a life saver. Similar to these:
