It's chilly and rainy today. I have chicken in the fridge that I need to use. I am thinking a casserole dish for dinner, but tired of the same ol' same ol'.
Chicken Enchilada Casserole 1 pkg. 10 count corn tortillas cut up into squares 8 oz sharp cheddar grated (you can add more if you wish) Two chicken breasts cooked (i just salt and pepper and boil on the stove) 1 cup salsa (like Pace or La Victoria) 1 cup milk 1 can cream of chicken soup 1 can cream of mushroom
Dump everything in a bowl and mix together. Put in a 9x13 dish, cover with foil, and bake at 350 for 50 minutes. Take off foil and bake for 10 minutes uncovered. Let cool for a few minutes and enjoy! This is also great if you have leftover chicken you need to use up.
All these look so good! I was making one of these and it'll be so easy to make to freeze. I will Def. Make freezer meals this time around. I didn't with my other pregnancies, and I regret it.
I'm gonna get a list going on what I'm going to make and freeze here soon.
I'll be using some of my left over Turkey this year too! Can't wait.
I'm kinda late to the casserole party but I wanted to share one of my fav recipes! It's Twice Baked Potato Casserole with BACON! It's more of a side dish than a meal but it's delicious.
