Weekends are my downfall. Probably spaghetti one night and take out another. Or more leftover chili if there is any.
We are in our fourth week of the same plan, so I need inspiration or something, too...but the ruts do happen, and I try to just roll with them. I prefer being in a rut to being unprepared, and find that being in a rut forces me to get more creative just so we eat something different. So I would say pick five things that are really easy and make them this week. Do the same ones next week. After you build the routine that way, and are a little sick of the same things two weeks in a row, branch out a little bit. Build up a list of 20-40 really great meals that you can make easily, then rotate them through. I cannot even be bothered to look in my favorites list right now to vary things up - but I will soonish.

I have been seriously slacking in meal planning, but I was so inspired by the latest Southern Living- turn one meal into 3! I never eat red meat 3 times in a week, so it's kind of a splurge.
Sunday- zesty pot roast w Parmesan mashed potatoes and roast carrots Monday- Shepherds pie pot pies ( w leftover pot roast and mashed potatoes) Tuesday- Beef noodle soup (more leftover pot roast) Wednesday- out w mom's group for dinner. Leftovers for everyone else Thursday - black bean burgers Friday- maybe take out, leaving early to go out of town Saturday
M--chili mac and corn muffins T-- meatball subs and salad W- pizza takeout for the kids, DH and I going out for our anniversary Th- pasta with white beans and sausage F- turkey burgers

I'm such a slacker! You all inspire me. Do you prepare all of your meals on Sunday before the week starts? That's my problem. I get home around 8pm. I try and prepare on Sunday but it's so hard. But i have to start doing this, because we are spending way too much on ordering in.
@NYMOM101511 - It is hard to get started! Definitely takes discipline, which I don't often have. I usually don't plan meals, but this week I made a few things on Sunday so I didn't have to get home from work and scramble to get something figured out for dinner. Sunday afternoon I browned 1.5 pounds of ground beef, then divided that in two and used one half for Sunday's dinner and the other half I made into taco meat. I also made white bean chicken chili that afternoon. (I used a roasted chicken from the grocery store to save time, and saved half the meat and put it in the freezer for another batch of soup in a couple weeks.) I probably spent at least 1.5 hours in the kitchen on Sunday preparing food. We often have pancakes and eggs for dinner, so I will often combine the dry ingredients for the pancakes on Sunday or a week night and then that saves 5-10 minutes prep time the night we have it for dinner.
I've been slacking this week and we ate out/left overs of take out since saturday. I'll be cooking tonight for the coming two days (asian orange chicken)
Friday is at my parents and then my hubs is traveling for a week ans am staying with my family so 0 cooking for a week woot!
