Meal Plan Monday

What on the menu for this week?

Discussion question:  I'm always impressed with the variety of meals posted.  Do your kids always eat what you cook or do you sometimes cook them something separate?

    M - ranch turkey burgers

    T - rosemary chicken wings

    W - slow cooker salisbury steak (didn't cook last week)

    Th - breakfast for dinner

    F & S - dinner at my parents house (family coming in from out of town)

    S - Oktoberfest at our church

    I try to tailor my meals to what I think my kids will eat and rarely make them a separate meal.  I sometimes wish they had a more wide palate (like eating fish) so I could make more meals that I enjoy and are healthier.

  • My kids rarely eat what I make, but they don't eat anything separate.  They are better eaters at breakfast and lunch, so I don't think they are often hungry for dinner.  I do try to choose meals I think they will like.

    M:  grilled cheese and tomato soup
    T:  chili and cornbread muffins
    W:  fish sticks, french fries, and corn 
    T:  pancakes and bacon
    F:  cranberry chicken w/ rice and broccoli
  • M- fish, rice pilaf, green beans
    T- grilled cheese, tomato soup
    W- homemade pizza
    Th- pasta with white beans and sausage
    F- ??? I think we are going to movie night at DS's school, so maybe a picnic.

    I try to plan kid-friendly meals or at least serve bread and fruit with the meal.
    DS born 8/8/09 and DD born 6/12/12.
  • M - Chipotle turkey tacos (cheese for kids), tomato and avocado salad

    T - Restaurant fundraiser night

    W - veggie burgers, roasted carrots and broccoli

    Th - Tilapia, buttered noodles and shrimp, Brussels spouts

    F - Chilis

    S - frozen pizza with inlaws while watching football

    I only make things the kids will eat or for which there is an easy permutation.

  • Sunday - roasted chicken, potatoes, green beans
    Monday - tilapia, rice, peas
    Tuesday - spinach and bean quesadillas
    Wednesday - slow cooker butternut squash soup with maple roasted chick peas
    Thursday - ravioli and broccoli
    Friday - ham, cheddar, broccoli calzone

    I do plan heavily considering the kids. Most meals, both kids will eat something. Some meals, one will not eat, others, neither will eat. For example, I want one night to be soup night. They have so far turned their noses up at most soups so my quest continues.
  • M - Crockpot spinach and artichoke chicken with rice

    T - omelets

    W - Leftover crockpot with noodles

    Th - chicken stirfry

    F - make your own pizza

    My DD eats nothing. We are regressing. I do not make anything special for her but I usually serve a starch and fruit with dinner and she will eat that. I will also separate noodles/rice from what I am cooking and she will eat those. If she tries everything on her plate she can have PB, but that rarely happens. She can have fruit after dinner and that is it. DS is a pretty decent eater, but I have definitely lowered the bar for my meals, especially with DH gone.

    Wednesday-Chicken Lo Mein one pot meal 
    Thursday-Chicken nuggets and fries
    Friday-pizza

    I try to meal plan around what DS will eat. With a toddler, he will like one thing one week and not another. I always initially give him what we are eating (exception of some things: like if we have crab cakes, he will get fish sticks) and then if he ultimately puts up a huge fight, I keep cheese sticks, yogurt and etc on hand in the house. I do try to plan at least one or two meals a week that are no-fails with him to make it easier on me. At the end of the day, during the week it is a lot about what can I get on the table quickly and under 30 minutes before he breaks down in being hangry since we don't get home till after 6 p.m. most nights.

    F - homemade pizza
    S - TBD

    DD eats whatever we eat.  DS get something separate and it's completely our fault for catering to his likes when he was a baby and now he's a super picky eater and it really sucks.

    I dunno, I think it's a bit like the chicken or the egg--which came first?  My DS (5 yo) is a selective eater.  The only thing I did differently with DD was using Ellen Satter's division of responsibility and other advice from the beginning, which I started when DS was about 15 months old.  And DD's foods were highly restricted due to GI issues until she was 15 months old, so really that was a wash. DD seems to be a naturally good eater.  I also think DS might be a super taster.  He likes really bland food, and he's very sensitive to smells.

    Haven't tried to roast them yet but it has me excited because DS can't have nuts and it would be great to have a nut alternative for crunch in things like trail mix.
  • I sooo want to make that. DD ate pumpkin soup at a sleepover and she is usually my hard sell on soup, so I think we will try this. Thanks!

  • Last night we grabbed Chinese food. Tues is @dashofreality‌ 's artichoke and spinach chicken over rice. (Btw, those Uncle Ben's 90 second rice packets rock. We are using a Spanish rice for this dish.) Wed is grilled cheese and chicken-broccoli cheese soup. Thurs leftover chicken. Fri is likely pizza.
  • Oh! I forgot to answer the question. We do a combo with DD. We try to get her to try what we are eating. But we like a lot of really spicy food, and we don't generally give her those meals. On those nights, she gets ravioli or something related to what we are eating. (A cheese quesadilla if we are having a spicy Mexican dish, for example.) She isn't a great eater at night, though. More a big lunch kind of girl.

    -last night i made eggplant ratatouille pie (baked casserole with sliced eggplant, tomatoes, peppers, onions, and mozzarella cheese) for us to eat tonight.

    -we have leftover korean food from DH's niece's party that we went to on saturday.

    -random farmer's market veggies will probably be made into some kind of pasta- just sauteed with onions and garlic and topped with parmesan.

    -spaghetti squash- i'll probably microwave and serve with tomato sauce and ricotta/parmesan.

    -i have whole wheat tortillas, so we'll probably have quesadillas one night. i'll probably make cilantro lime cole slaw to go with it.

    DS generally eats what we eat. his biggest meal is usually lunch, and he also tends to have a snack with DH after he gets picked up from daycare. so, if he doesn't seem that hungry at dinner, i don't stress too much. if it's a new food and he's just not into it, i'll offer him fruit or yogurt or a previous night's leftovers.

  • @NADA-H sure! it's from american wholefoods cuisine, a vegetarian cookbook from the 80's that i absolutely love.

    Eggplant Ratatouille Pie
    (these are approximate quantities- it depends on the size of your veggies. sometimes i end up with a ton of veggies, and i end up making 2 pans worth. it is really good leftover, so no worries there)

    1/4 cup olive oil
    2 eggplants
    2-3 bell peppers, preferably a mix of red and green
    2-3 tomatoes (OR about 1 cup of tomato sauce)
    2 onions
    1/2 lb sliced mozzarella or provolone, or a combination
    2 tsp dried oregano
    2 tsp dried basil
    1/2 tsp salt
    freshly ground black pepper
    5-6 cloves garlic (or to taste)
    2 Tbsp red wine vinegar

    Preheat the oven to 375 degrees. Thinly slice the eggplants, bell peppers, tomatoes, and onions. Pour half the olive oil into the bottom of a 9 x 13 inch baking dish. Layer half the sliced eggplant, peppers, onions, and tomatoes (or tomato sauce). Sprinkle with salt and pepper, and 1 tsp each of the dried basil and oregano. Layer on half the cheese. Top with the rest of the eggplant, peppers, onions, and tomatoes. Put the other half of the cheese on top (add parmesan if you like, as well). Sprinkle with chopped garlic (I like a lot bc we are garlic fiends), salt, pepper, and remaining basil and oregano. Drizzle with the rest of the olive oil and the red wine vinegar. Cover with aluminum foil and bake for about 30 minutes, or until the eggplant is fork tender (the thinner your slices, the faster it'll cook). Take the foil off and bake for another 10 minutes or so until the cheese browns.
