Can't remember where and who asked for this recipe, but here it is. I made it tonight and it's great! I did make some changes and additions, that I'll list below. It was really easy and would make for a great weeknight meal with a little prep in the AM or on the weekend or using shortcuts like pre-chopped onion and bell peppers and pre-peeled and deveined shrimp.
I doubled the recipe {except for the butter} and added a pound of smoked sausage as well. I cooked the roux {flour/butter mixture} 2 or 3 minutes longer than she called for, to give it a deeper flavor. I chopped all my veggies small since DD "hates" veggies that she can see. LOL I also added 3-4 cloves of garlic to the veggies when I was sautéing them. Added the sausage with the tomatoes, broth, etc. I covered it for the first 10 or so minutes and then uncovered for 30 minutes more while our rice cooked. The longer you can cook it, the better it will be. We served over yellow rice, but brown or white would be great too. Crusty bread is a must!!
