It's meal plan Monday!

I'm excited for this thread. Here's my meal plan for the week:

Monday: rotisserie chicken meal from the grocery store
Tuesday: FI's gone, I'll either have tortellinis or breakfast for dinner
Wednesday: Hamburgers and sweet potato fries
Thursday: Homemade mac & cheese with broccoli and leftover chicken
Friday: Potstickers, asian veggies and rice
Saturday: BBQ chicken sandwiches
Sunday: Monte cristo sandwiches with breakfast potatoes

  • Yum! I'm coming to your house for dinner. I've only got today figured out because I have to go grocery shopping tomorrow.

  • I forgot to take out the freezer meal last night and babysitter(mom) decided to cook so meals this week look something like this.

    Mon: Ravioli with sausage and chicken parm

    Tues: Freezer meal

    Wed: BBQ Chicken Empanadas

    Thurs: Freezer meal or leftovers

    Fri: Leftovers

    Sat:???

    Sun: Out to our favorite restaurant for my parents anniversary

  • Monday - soup and toast for me since I work, pasta and meat sauce for the boys
    Tuesday - leftover pasta for me, possibly soup and grilled cheese for boys
    Wednesday - baked chicken and homemade perogies
    Thursday - Philly cheesesteak, poutine, and pudding (DH's birthday, such random foods he wants)
    Friday - homemade pizza for the boys, leftovers from the week for me since I work
    Saturday - we're having a thanksgiving lunch with grouse DH caught instead of turkey so I plan to take that to work and boys can have leftovers
    Sunday - no idea for boys, sandwich for me to bring to work
    Monday - another thanksgiving dinner with turkey this time

  • I work a lot of nights this week so my dinners are mainly casseroles or crockpot but at least DH doesn't have to cook much!

    Monday- Mexican lasagna
    Tuesday- ranch pork tenderloin with Parmesan mashed potatoes
    Wednesday-chicken broccoli divan
    Thursday- ziti, garlic bread and salad
    Friday- crockpot chicken and stuffing
    Saturday- crockpot Zuppa Toscana...It tastes a lot like Olive Garden's!!!
    Sunday- leftovers
  • Tonight: Crock pot beef stew with mashed potatoes and corn
    Tuesday: leftovers for DD and me since DH is working
    Wednesday: chicken tenders, homemade French fries, grapes
    Thursday: dinner at my mom's (DH working again)
    Friday: spinach ravioli and breadsticks

    Still doing pretty simple meals since taking care of a toddler and newborn uses up most of my energy/motivation/time.
    PCOS with long, irregular cycles
    First round of Clomid in May 2012= BFP #1, DD born January 2013 
    BFP #2 in January 2014, DS born September 2014

    M - Cheesy zucchini rice with chicken

    W - Tacos
    Th - chicken broccoli noodle casserole
    F - French dips with tater tots

    ETA - at our house DH cooks on the weekend, so my meal plans are always just M-F

    The meal plan for this week is pretty loose:

    M - Chicken taco leftovers from last night

    T - Stir fry with chicken

    W - Probably soup

    Th - Chicken and tomato pasta w/peas from Parents magazine (I've been pleasantly surprised by how good most of their recipes are)

    DH is in charge of dinner Fri-Sun.

  • I need links to these crockpot recipes, ladies!!

    M- Leftover chili made this weekend
    T - One pot dish - israeli couscous, pesto, parm, shredded chicken, and tomatoes
    W - Eating out for a Mom's Night Out, DH and kids are on their own
    R - Breakfast for dinner
    F - Tacos

    I haven't made it to the weekend yet in planning....

  • Hi All -- Everyone's menus look awesome :-) I'm definitely borrowing some ideas!

    Here's our dinner list for the week:

    Monday: Parmesan Chicken and Rice with Sliced Zucchini (got this recipe from my high school spanish class and have loved it for years)

    Tuesday: Shepherd's Pie with Ground Beef, Carrots, and Peas

    Wednesday: Slow Cooker Chicken Pot Pie w/Puff Pastry Crust

    Thursday: Leftover Pork Roast Taquitos (we had pork roast for dinner on Sunday night, I'll just repurpose that and make tacos by shredding it up and mixing with salsa and cheese).

    Friday: Takeout of some kind.

  • This week my husband is likely working late a couple of nights so the menu is flexible.
    M: 20 minute skillet lasagna with broccoli
    T: Chow Mein or leftovers
    W: crockpot curried chicken with sweet potatoes or pizza with ledtover chicken taco meat
    Th: leftover curried chicken or fresh
    F: chow mein
    S: leftovers
  • Great idea! I'm just reading the meal planning threads now. Here's what I've got so far.

    M: turkey casserole (cooked the turkey on Saturday)
    T: turkey soup
    W: turkey chili
  • M: Roast chicken, egg noodles and peas.
    T: dh is going out with a friend,so I will have him bring me something.  Kids will eat leftover chicken pot pie,
    W: Chili, and DS undetermined chili alternative
    T: brats and baked potatoes

    And Friday is grocery day, and I usually do something frozen/easy.

    Both recipes are really easy. For the chicken, I just salt & pepper chicken breasts (bone in because it has great flavor), brown it in some olive oil. Set it aside. I pour off a bit of the oil so that the finished product isn't so greasy. I chop an onion and a green bell pepper and add those and about 1 cup of rice to the skillet that the chicken was just cooked in. Once you saute the rice, onion, and green pepper for a couple of minutes, add about 1 and a half cups of chicken stock, some salt, pepper, and about a teaspoon of garlic powder. Once you mix that, you can transfer the sauteed rice & veggies to an oven proof dish, put the chicken on top of the rice mixture, and pour lots of parmesan cheese over top of the chicken pieces. Cover & cook @ 375 for about 45 minutes. I serve it with sauteed zucchini that DH ends up mixing into the rice.

    For the slow cooker chicken pot pie, I use this recipe from Real Simple:
    The great thing about this recipe is that its very forgiving so I can add whatever veggies I happen to have on hand. Its always a winner!

  • Tonight - chicken tortilla soup.
    After that, probably spaghetti with a salad and then we are out of town later this week.
    Mom to 3 year-old girl and 1 year-old boy
  • Yesterday - Vegetarian tacos with a lentil quinoa filling

    Tues - roasted red pepper pesto penne

    Wed - dinner at my parents, I think it's bean stew and grilled cheese?

    Thur - Minestrone

    Fri - rehearsal dinner for our friends' wedding!

    When I have more time I need to read this thread more thoroughly for ideas. I'm getting into a cooking rut again because I'm too lazy to find new stuff. ;-)

  • Monday: Garlic chicken with veggies via frozen meal bag.

    Tuesday: Spaghetti and meatballs with garlic bread.

    Husband leaves town for work....


    Wednesday: Chicken nuggets with veggies and fruit.

    Thursday: Frozen beef lo mein

    Friday: Pizza

    I swear this is not what we regularly eat. My husband loves to cook and when he leaves town I get lazy ;)
