1. Anything clothes related. I made a bin with dolls, clothes, bibs, fake bottles, etc. and she spends a lot of time just attempting to dress them, feed them, etc.
2. playdough. OMG playdough. I just got her some last week and we have now played with it every day. I now use it as my go to when getting dinner ready. The kind i got has a ton of mini jars because she loves the different colors and also came with a bunch of cookie-cutter type utensils and all I have to do is flatten a couple of the colors and she goes to town.
3. We got this sticker set which are really more like decals for when we went on the plane and they have been a hit. There are a bunch of pages and it is a dollhouse these so every room of the house and all of the kids/crud for each room. They are not sticky which I love and she has a great time with them.
4. All Little People vehicles (plane, school bus, etc.)
She used to love little people, but now won't touch them. Mr. Potato head keeps her interest for a little bit. I feel like we have TONS of toys that never get any use anymore. She barely even plays with her babies anymore. Seems like we read (the same 6 books) all day long. She will do stickers and color for about 10 minutes. My mil made her homemade play doh, she doesn't like to touch it lol.
I'm going to maybe look for a train track.
Maybe you already so this, but do you do any toy rotation? This has been our saving grace. Currently we have three large bins in her closet and I rotate them out every few weeks. Having fewer toys out at one time has rerally helped us and the change in scenery means more get played with too.
Currently our system is this...
Permanently out:
1. Bin with all Little People, other small people, accessories.
2. Baby Bin - has three dolls, clothes, bottles, bibs, shoes, purses, hats, etc for dress up. Her baby stroller stays out also.
3. A leap pad system
On rotation - every few weeks I switch bins. Each bin has a couple of stuffed animals, a couple of balls, something like lights up/makes noise (we have various annoying musical toys), something that requires thought (shape sorter, etc). Each week I put out two puzzles. Each bin has a couple of Little People vehicles/stations like the house, bus, etc.
Separately I also have an art bin with paper, pom poms/sorter, pipe cleaners, sticker books, play dough, etc.

We have the latches puzzle too. She definitely cannot latch anything let but we keep them open and she has still liked opening and closing the different doors and identifying the animals, colors, etc.
The art bin has been a developing thing. For a long time it was something she wouldn't even spend 5 minutes on or would make such a mess that it wasn't even worth it. Then we started with paint, moved to markers (which I still hate since she tries to draw on everything) and then i made a pom pom sorter and got the pipe cleaners to put in the collander and now she is obsessed with play dough. She seems to be getting a longer attention span and that helps.
