Wed - Pizza & salad (school fundraiser for DD)
Thurs - Salmon, sweet potatoes, salad
Fri - Sausage and tortellini soup, garlic bread
Sat - Date night

  • No order yet, but here are the plans.

    Turkey kale roll, cranberries, acorn squash
    meatloaf (frozen from last week), green beans, dumpling squash
    chicken basil stuffed potatoes, salad  
    eggplant parmesan, pasta and sauce
    caribean beef stew, whole wheat biscuits
    pizza (frozen from a few weeks back)
    Friday night is date night, no kids so we are going to The Melting Pot :)
    Hallelujah, it's a miracle, I have children AND a signature!

  • It's chilly here so all comfort foods! Mon : roast beef, mashed potatoes and green beans cooked Greek style. Tues : cheddar cauliflower soup Wed : shredded beef sandwiches with maybe broccoli slaw Thurs : fried chicken , corn bread and coleslaw Fri : not sure.
  • Creamy Tomato Tortelini soup w/ fresh bread

    Panko parm tilapia w/ sweet potatoes and okra

    Seafood gumbo and rice

    Creamy Italian chicken and rice w/ asparagus or a salad

    Broccoli cheese quiche and fruit
  • Monday- Enchilada and tacos
    Tuesday- sausages, rice, peas
    Wednesday- breakfast for dinner
    Thursday- leftovers
    Friday- chicken stir fry
  • Chicken Stew with bread
    Stuffed Shells, veggie, salad

    Lemon/garlic shrimp, long grain rice, broccoli

    the other nights will be lefts overs of the Chicken Stew, Stuffed Shells.

  • @NandaB : This is the recipe have adapted to suit my family.  The recipe below is fairly traditional, my modifications are not, but yummy.  :-)

    My modifications:
    - I don't use mushrooms because no one besides me likes them.  I also omit the celery.  Instead, I use sweet potato cubes, red pepper, and peas, in addition to the other veggies listed in the recipe.
    - I add 1/2 teaspoon of cumin and a clove of minced garlic.
    - I don't make a pie crust, but instead put the mixture in a 9x13 pan and covered with strips of puffed pastry (I make a lattice pattern).  I usually bake for the same amount of time, just watch the pastry and cook until golden brown and bubbly.
    - One other tip - I soften the veggies in about 1/2 c of the chicken broth prior to adding into the chicken mixture just so they begin to soften and the potatoes and carrots can get a jump start to cooking before going in the oven.  I don't add the peas until right before it goes in the oven.
    - I use shredded rotisserie chicken in mine and I love it!

    BRINNER (breakfast for dinner): hashbrowns, fried eggs, bacon, toast, mimosas

    Leftovers/whatever you can find night

    Shredded barbeque-style sliders (on Hawaiian rolls) with sweet potato fries

    Pioneer Woman's potato soup with leftover home-made croutons
