So I've gone a little fall crazy, and am craving pumpkin ! Last week was pumpkin spice cupcakes, this weekend pumpkin waffles will be attempted. Does any one have other awesome punpkin or fall favourite recipes?
Oh, I've also made pumpkin lasagna before and it came out wonderful too. I made the sauce with cream, canned pumpkin & spices. Then I just added some pumpkin-y spices to the ricotta instead of Italian. With the addition of chicken apple sausage, it came out sweet and savory. Different twist to a classic, and we liked it!
I make mini no-bake pumpkin cheesecakes. I don't have the recipe handy but it's basically cream cheese, pumpkin purée, vanilla, pumpkin spice and some sugar (Pinterest)
I do the minis then throw some in the freezer and pull one out like 10-15 mins before I want dessert.
Have done pumpkin ravioli and tried pumpkin enchiladas (on Martha Stewart ). This year I saw a recipe for pumpkin con queso at whole foods, so I want to test it out too! I love finding interesting savory ways to use it. Also love making pumpkin ice cream!
Yum! You guys are making me hungry! We love chocolate chip pumpkin bread, carrot pumpkin soup and even pumpkin frozen yogurt. Mix a can of pumpkin with low fat yogurt or Greek with a little sugar or Splenda and put in your ice cream maker.

Pumpkin cornbread croutons, pumpkin soup, pumpkin pecan oatmeal, pumpkin granola, pumpkin cereal bars, pumpkin croissants, pumpkin butter, pumpkin cheesecake, pumpkin brittle, pumpkin cranberry scone mix. For the record, DH went on a pumpkin Palooza and picked all of this out. I've been craving pie, and had pumpkin pie twice this past week from Big Boy. Amazing.

I made pumpkin pancakes for breakfast. So frickin good!! have 1/2 a big can left so i bet there is pumpkin fluff in my future!

I've usually always made pumpkin cookies from scratch, but the other day I took an easier route that I found on Pinterest and they came out wonderful!
1 box of spice cake mix
1 can of pumpkin
1 bag of chocolate chips (I always get Ghirardelli)
That's it! And they are moist & delicious.
