So this is a challenge... I have a friend who has some really strict dietary restrictions. No more than 2g of sugar per serving of ANYTHING, added or natural. No alternative or artificial sweeteners (no aspartame, splenda, agave, stevia, monkfruit... nothing). For example - she can't eat marinara because of the sugar in the tomatoes. She will eat roasted vegetables, meat, fish, pork, for example.
She is having surgery in the next few weeks, and will be very much on bedrest for about 6 weeks afterward. She's trying to come up with some ideas for freezer meals. So far, all I can think of is crustless quiche, and I don't have a good recipe for that. I'm also planning to prepare some meals for her, but can't think of much.
So... any other ideas for freezer meals that have almost no sugar? Also, I don't think she owns a crockpot, but I'm thinking of buying her one, and preparing some crockpot freezer meals as well.
Thank you!!!!
Re: Need Recipe Help!
two things that come to mind are chicken soup and beef stew. both are pretty easy, freeze well, and could be made in a crockpot.
another thought- cooked, seasoned ground turkey (like a picadillo)- it could be used for tacos or eaten in lettuce wraps or with brown rice, depending on what she can eat. (if she can have rice, you could cook a bunch of brown rice and freeze that, too.)
enchiladas- if she can have corn tortillas. stuff with shredded seasoned chicken, beef, or cheese, and you can use a non-tomato-based sauce. (i love tex-mex style chili gravy: https://www.seriouseats.com/recipes/2012/02/original-cheese-enchiladas-with-chili-gravy-recipe.html)
That's tough. We ate like this for a while (still do 85% of the time) when DH went paleo. We just ate tons of meat and veggies however most of it doesn't freeze very well.
Maybe a beef stew would work?
